ANA InterContinental Tokyo is now inviting guests and diners to place their advance orders for these decadent treats.

A Bûche de Noël – or yule log – is a chocolate roulade gâteau of French origin dating back to the 19th century. Nowadays, however, yule logs are defying convention and delighting the senses, becoming ever more refined and adventurous in terms of both creative design, decoration, and ingredients. At ANA InterContinental Tokyo, Japanese aesthetics transform a traditional yule log into the Bûche de Noël Hibiki in the form of an edible whisky barrel generously infused with 120 cc of Suntory’s premium Hibiki 30 year old whisky. This rare and precious, award-winning Japanese whisky is a masterful blend of malt and grain whiskies matured at least 30 years in Suntory’s most treasured oak barrels.

The whisky-soaked, four-layer, chocolate sponge cake with praline nuts, has a mousseline centre of blended custard cream and traditional butter cream. The cake is coated with marzipan and an outer covering of wood grain textured almond paste reminiscent of an oak whisky barrel complete with almond paste bilge hoops painted with silver pearl lustre-dust. The Bûche de Hibiki rests upon a butter cookie base.

This rich and extravagant set of ingredients, with the luscious buttery filling and alluring frosting, gives the cake a luxurious, moist yet firm texture, while the oak essences of the fine Hibiki whisky harmonise naturally with the chocolate elements and the almond paste. Exquisite woody aromas rise from the plate with the compelling taste of the Hibiki apparent in the very first bite, adding exceptional flavour and distinction to this creamy dream of a dessert.
