With a different meal created every Sunday by Head Chef Sebastien Calais, it’s a wonderful opportunity to sample the flavours of France. The dishes are designed to be shared, making the Plat du Jour special perfect when catching up with friends and family.
Delectable menu items include entrées such as Smoked salmon and salmon rillettes on toast; and Candied walnuts, pears, rocket, bleu cheese and serrano ham salad; to richly-flavoured mains like Bavette a l’échalotes (Flank with shallots sauce) served with garden salad and hand cut chips; and Crispy confit duck leg and Pommes Sarladaise.
Deery’s Head Chef Sebastien Calais says of the Plat du Jour experience, “cooking, for me, is an extension of myself. It does and should embrace who I am as a person. Growing up in Paris, food has always been an integral part of my life.
“Cooking French food is about produce, it’s about family and it is about heritage. I can recall sitting in my Grandmother’s kitchen from around 10 years old and watching her cook pot au feu (casserole) and enjoying the process, the technique and the experience surrounding food.”
