A Tribute To Black Truffle At Lafite, Shangri-La Hotel, Kuala Lumpur

It’s that unforgettable aroma of black truffle that has the gourmet world swooning over its infusion in food that ranges from beef to duck liver to ice-cream.

This culinary jewel from France is the star of Lafite’s food promotion titled “A Tribute to Black Truffle” from February 17 to March 15.

Lafite’s chef de cuisine Jean-Philippe Guiard has prepared a black truffle degustation menu and you could have lunch or dinner with three, four or six courses from this menu. Black-Truffle

The whole restaurant will be scented with the winter black truffles as you begin with Black Truffle Duck Liver Terrine, Porcini Chutney and Warm Truffle Brioche, followed by Black Truffle Scallop Millefeuille, Fake Black Truffle and Jerusalem Artichoke.

You could go on to Oyster and Black Truffle Veloute, Oyster Leaf, then the main course of Wagyu Beef Tenderloin with Black Truffle Crust, Truffled Creamy Potato and Rossini Sauce.

Mimolette Cheese and Black Truffle Millefeuille, then Chocolate Cremeux, Caramel Sauce and Black Truffle Ice-Cream bring it all to a magnificent end.

You could have a choice of any three, four or six of these dishes, at MYR330++, MYR380++ and MYR480++ respectively.

Black truffle is a fungus that grows among the roots of mainly oak and hazelnut trees in Perigord and other areas in France. They can also be found in Italy and Spain. It is believed that these three countries are where the host plants landed during the last Ice Age. Here the search for black truffles and their cultivation is a tradition going back more than 200 years.

France accounts for some 45% of the world production of black truffles, with a price from 1,000 to 2,000 euros per kilogramme. They are one of the most expensive edible mushrooms in the world.
