Amber at The Landmark Mandarin Oriental, Hong Kong Celebrates Its Tenth ‘Two Michelin Stars’

Awarded for the tenth consecutive year, Amber at The Landmark Mandarin Oriental, Hong Kong has once again been bestowed with a two-star honour by the 2018 edition of the Michelin Guide for Hong Kong and Macau. Celebrating its 10th anniversary this year, the Michelin Guide, one of the highest accolades in culinary excellence, has been awarding stars to outstanding restaurants since 2009.

Richard Ekkebus began his illustrious career with an apprenticeship in his native Holland under Michelin-starred chefs Hans Snijders and Robert Kranenborg. He further perfected his art under the tutelage of some of the greatest three-star chefs in France, including Pierre Gagnaire, Alain Passard and Guy Savoy. Prior to opening Amber at The Landmark Mandarin Oriental in 2005, he worked as Executive Chef at The Royal Palm in Mauritius and The Sandy Lane in Barbados.

In 2015, Richard was awarded the “Chevalier de l’Ordre national du Merite” by the President of the French Republic, Francoise Hollande. Created in 1963 by President Charles de Gaulle, the Order of Merit recognises distinguished service to France, in the public and private sectors.

Having built his reputation on a solid foundation of traditional French cooking techniques, Richard is renowned for his focus on superior produce and innovative presentation, creating cuisine with a contemporary and light feel.

Amber has launched the ‘Amber Classics Menu’ as a unique opportunity for its loyal guests to experience how it has continuously evolved and moved forward as it pays homage to some of the best-loved dishes. Priced at HKD2,398+10% service charge per person (note: price is subject to change due to the fluctuating prices of ingredients), the exceptional 6-course menu is a collection of the two Michelin-starred restaurant’s classic signature dishes selected from the past 12 years.

new zealand scampi in organic tomato & watermelon ‘nage’ with espelette chilli & coriander

hokkaido sea urchin in a lobster jell-O with cauliflower schrenki-dauricus caviar & crispy waffles (15g of caviar)

‘dombes’ frog legs in crispy kataifi sprinkled with ‘quatre epices’ purée & chips of ‘aomori ninniku’ garlic, Italian parsley sabayon

bresse poulard breast steamed with black winter truffles, its leg minced in silver beet, jus & albufera emulsion (10g of w.a. winter truffles)
