An Indulgent Christmas And Glitterati New Year’s Eve At CÉ LA VI Hong Kong

3Ramp up the high spirits this December as CÉ LA VI Hong Kong is set to take the party scene to a whole new level and close out 2015 in the most spectacular way.

Uniquely inspired by the celebrations, guests can indulge in a festive Christmas menu specially created by CÉ LA VI’s Executive Chef Chet Adkins.

Available from 1st to 30th December and priced at $888, signature dishes on the Festive Menu include the Broccolini, served with  a combination of black garlic and vinaigrette to tantalise the taste buds, USDA Short Ribs accompanied by a fusion of Kabocha shiitake ravioli and dressed in a teriyaki veal jus, and all-time favourite Foie Gras French Toast, a unanimous hit with delicate pieces of pan-fried Foie Gras nestled atop a fluffy sweet and savoury brioche drizzled in an exquisite umeshu maple glaze.

End the meal with “Taste and Textures of Chestnut”, a festive dessert designed by Executive Pastry Chef, Jason Licker. Taking inspiration from the winter’s all-star ingredient, chestnut, the dessert is a composition of layers of creamy, crispy and crunchy Japanese chestnut.

For guests looking to enjoy the last meal of 2015, CÉ LA VI is offering an exclusive New Year’s Eve Menu, priced between $888 and $1,888 on 31st December 2015. The menu includes favourites such as the Snapper Ceviche served with Aji Amarillo and exclusive items such as the Snow Crap Tempura, consisting of Ruby Red Grapefruit and Kochijang and Salmon served along a rich Samjang sauce and White Kim Chee. For dessert, diners can enjoy a quartet of desserts specially chosen by Executive Pastry Chef Jason Licker.

For an additional $888 per person, guests can opt for each dish to be complemented with premium wine pairings and champagne. Chief Sommelier Bojan Radulovic states “Our selections of wines are a striking accompaniment to the culinary offerings; in particular we are offering Tignanello by the glass, which is considered one of the most iconic wines from Tuscany.”

Later on in the night, CÉ LA VI is offering a chic and sophisticated evening to celebrate the New Year countdown at the SkyBar, overlooking Hong Kong’s breath-taking skyline and vivid nightlife in the heart of the city.

Guests can enjoy the soulful sounds of Ibiza’s Nikki Beach’s Resident DJ Madamoiselle Sabah spinning deep house at the SkyBar. In the Club Lounge, resident DJ Yeodie and Hawaii’s No.1 DJ K-Smooth will bring in the New Year with the best Top 40s and commercial club hits.
