Aragu Launches Creative New Menu At Velaa Private Island

unnamed (6)Elite luxury hideaway Velaa Private Island in the Maldives aims to make Aragu, their signature waterside restaurant, a must-try dining destination. Aragu, meaning essence in Dhivehi, the local Maldivian language, explores exactly this. The essence of gastronomy through innovative cuisine and a concept that serves two different ways of enjoying one dish.

The first is the Simplistic collection of dishes that focus on simple combinations and the clear and defined taste of individual elements. Second is the Sensation menu, which includes the same dishes, but fuses it with modern twists that create contrasting sensations with surprising tastes and presentations. Other highlights include Texture, a combination of three varieties of cheese with different textures and the Sensuality dessert menu finishes the meal and offers five decadent options.

Helmed by Sri Lankan Chef Gaushan de Silva, he brings 20 years of experience to the table and explains “I like to surprise my guests with flavour combinations they have never experienced before and perhaps they have not even imagined are possible. All tasting menus at Aragu blend the finest produce with molecular gastronomy for exceptional tasting food. Chef Gaushan adds “The level of clientele we have on Velaa expects no less than the very best. Hence, we use the best quality ingredients from all corners of the globe, with price not being a barrier.”

The new menu offers a range of delectable items including Scottish Salmon accompanied with pickled chanterelles and smoked cream cheese, succulent Barbary Duck Fillet, which is slow roasted and served with stir-fried bell peppers, raspberries and a black rice vinegar reduction, are both on the Simplistic menu. Flavoursome King Prawns with a white miso glaze, orange and pickled zucchini ribbons from the Sensational menu and to finish, the Blackcurrant dessert is a blackcurrant bavarois with vanilla bean ice cream topped with a crunchy cashew nut crisp from the Sensuality Menu.

This autumn, Aragu introduces guests at Velaa Private Island to Chef Gaushan’s newest culinary creations, set against panoramic views of the Indian Ocean and the Maldivian sun, making it an experience that feeds all your senses.
