Catch our yearly traditional Lion Dance performance at the Hotel’s main entrance on the first day of Chinese New Year (28 January) at 10:18am to welcome prosperous beginnings.


Masterchef Lap Fai continues to outdo himself with the debut of the season’s new exquisite takeaway selections.

Symbolic of welcoming an ‘elevated’ year of fortune, bring home the Okinawa Black Cane Sugar Nian Gao 生机勃勃(冲绳黑蔗糖年糕)(S$40.80) and Purple Chinese Yam Cake with Chopped Shiitake Mushrooms and Conpoy 紫气东来(瑶柱菇粒紫淮山糕)(S$42.80). A perfect harmony of sweet and savoury, the traditional Nian Gao is given a refreshing spin with the use of premium Okinawa black cane sugar, resulting in a delightful variation with hints of tantalising fragrance. This customary treat can be enjoyed pan-fried or freshly-steamed for those who fancy a lighter alternative.

Similarly denoting a forthcoming year of prosperity is the delectable Purple Chinese Yam Cake with Chopped Shiitake Mushrooms and Conpoy. Known for its nutritious properties, this delicious taro dish melds the sweet delicate taste of ‘Huai Shan’ and gratifying bits of shiitake and conpoy, lending a touch of savoury umami flavour.

Other signature favourites such as the Fortune Traditional ‘Nian Gao’ with Organic Cane Sugar 发财年糕 (有机蔗糖传统年糕) (S$38), Wealth Carrot Cake with Chinese Sausages 步步高升 (腊味萝卜糕) (S$38) and Happiness Chestnut Cake with Osmanthus 马到功成 (特制桂花马蹄糕) (S$38) are also available.

As pristine as it is visually appealing, enjoy the oceanic gem of ‘Hokkigai’ that accompanies immaculately presented platter of mesclun greens, strips of radish, carrot, red ginger and jellyfish, topped with yam crisps. Those who fancy a healthier vegetarian alternative may opt for the Organic Seasonal Greens “Lo Hei” served with Chef Fai’s Homemade Sauce延年益寿捞生(健康有机蔬菜捞生伴辉师傅创意酱)(S$68.00 for small and S$118.00 for large). Masterchef Lap Fai’s specially concocted sweet-tangy sauce complements the brilliant colours and refreshing flavours of this auspicious salad!

Other top-selling seafood variations include Fresh Salmon “Lo Hei” 发财捞鱼生 (三文鱼捞生) (S$68.00 for small and S$118.00 for large) and Sliced Abalone “Lo Hei” 贺岁鲍捞生 (鲍鱼捞生) (S$78.00 for small and S$138.00 for large). Savour Fresh Hamachi (Japanese Yellowtail Fish) “Lo Hei” 吉祥捞鱼生 (哈马池捞生) (S$78.00 for small and S$138.00 for large) or for a more indulgent experience, revel in fresh harvests of Live Australian Lobster, Abalone and Fresh Salmon Roe “Lo Hei” 龙腾虎跃鲍捞生 (澳州龙虾,三文鱼子,鲍鱼捞生) (S$548.00 for 10 persons).

Covey blessings of good fortune with Hua Ting’s specialties for reunion feasting.  Making a much anticipated comeback are popular items including the Deluxe “Pen Cai” 围村家乡盆菜 (S$328 for small and S$598 for large) replete with well-stocked delicacies representing abundance of food and wealth, as well as luscious roasts such as Roasted Suckling Pig 当红乳猪全体(Seasonal Price), Crispy Roasted Pork 招牌脆皮烧肉 (S$52 for 1kg) and Crispy Roasted Duck (Whole) 招牌脆皮全鸭(S$82).

New take-home delicacies include the South African Whole Abalone (6-head) on Homemade Fish Paste stuffed in Bean Curd Pocket braised with Superior Duck Sauce (S$40 per person), Sautéed Live Local Lobster with Black Truffles served on Pan-fried Turnip Cake with Crispy Lobster Head (S$36 per person) and Braised Superior Bird’s Nest and Egg White with Thick Chicken Broth served in Fresh Greenhouse Tomato Cup (S$48 per person).

Highlights on the menus include Sautéed Tiger Prawn and Egg White topped with Salmon Roe 嘻哈齐欢聚 (三文鱼子蛋白炒虎虾球); Steamed Soon Hock Fish in Superior Soy Sauce 年年庆有馀(清蒸笋壳鱼);Braised Whole Abalone (10-head) with Fa Cai, Dried Oysters, Venison Tendon and Seasonal Greens in Superior Oyster Sauce 生意贯全球 (蚝皇发财好市十头鲍扣鲜鹿筋时蔬); Braised Superior Bird’s Nest with Shredded Scallop and Egg White平步青云官燕盏(带子丝蛋白扒官燕盏); Roasted Whole Golden Suckling Pig 金猪迎新春(金陵片皮猪全体);and the list of delicacies goes on.

Hua Ting’s Auspicious Takeaways and Prosperity Set Menus are available from 9 January till 11 February 2017.Prosperity Set Menus are priced at S$98 or S$138 per person (minimum 2 diners), S$388 or S$518 for 4 persons, S$688 for 6 persons, S$768 for 8 persons, S$888 to S$5888 for 10 persons. Reunion Lunch is served from 11:30am to 2:30pm on Mondays to Fridays and 11:00am to 2:30pm on Saturdays, Sundays, Eve of Public Holidays and Public Holidays, while Reunion Dinner is from 6:00pm to 10:00pm daily.

Presenting three set menus priced from S$68 per person, look forward to dunking fresh ingredients in an array of flavourful broths prepared from scratch daily. Hua Ting Steamboat Fortune Set Menus available from 16 January till 11 February 2017 are priced at S$68 and S$88. Joyous Treasure ‘Pen Cai’ Steamboat priced at S$598 per pot serves 5 to 6 persons. Reunion lunch is served daily from11:30am to 2:30pm, while reunion dinner is served from 5:30pm to 10:30pm.
