Australia’s “Punk Princess of Pastry” Anna Polyviou Presents Sweet Treats at China World Summit Wing, Beijing

Dessert lovers will be on a sugar “high” at the peak of the capital city – The Lounge at China World Summit Wing, Beijing – from 5 to 11 December 2015. Chef Anna Polyviou, executive pastry chef at Shangri-La Hotel, Sydney, presents a decadent three-tier “Afternoon Tea at The Peak” set, which includes Carrot Cake of MasterChef Australia fame.

Chef Anna, known as “the punk princess of the pastry kitchen” exudes her wicked fun drive and love for breaking the rules in her world-class confectionary. The award-winning pastry chef walked into Shangri-La Hotel, Sydney three years ago, transformed the pastry team and is now a driving force behind the revolution of patisserie at fine hotels around Australia.

Her kitchen journey began at Sofitel in Melbourne, where she won Les Toques Blanc’s Best Apprentice in Victoria award, taking her to Claridge’s Hotel London. There she learnt to make the world’s most classic English high teas, a talent she adapted to her more contemporary hotel setting in Australia.

In Europe, she worked with Pierre Hermé’s famous Paris patisserie before returning to Australia to be the executive pastry chef at The Bathers’ Pavilion in Balmoral Beach for five years.

The young innovator of the kitchen will delight both the palate and eyes with “Afternoon Tea at The Peak” – a traditional three-tier English afternoon tea set with a twist. Chef Anna spins her creative culinary magic with a rotating menu of sweet and savoury mini delights. Guests can indulge in Tropic-Anna, a refreshing dessert bursting with tropical fruit flavours, Strawberries ‘n’ Lychee Crème Shot, a citrusy vanilla milk panna cotta, and Pork Roll, a creative combination of caramelised pork belly, carrot and coriander.

Fans of the traditional buttery scones will also not be disappointed with Chef Anna’s Buttermilk Scones and Tea Raisin Scones served with Clotted Crème and Jam.

Each set is priced at RMB238, subject to 15% service charge.
