Award-Winning ALBA 1836 Reaches New Culinary Heights

Chef de Cuisine Luca Piras and his culinary team have meticulously crafted not one, but two menus celebrating World Gourmet Summit’s 20th anniversary.

From March 28th to April 24th, Chef Luca’s kitchen will offer guests an opportunity to experience delectable Italian dishes presented in ALBA 1836’s signature style.

The special 4-course promotional WGS2016 menu includes a starter of Fresh Sardines stuffed with breadcrumbs and almonds served with orange and pickled onions followed by a plump Pumpkin Tortelli tossed in brown butter and Amaretti.The main course is sure to please as Chef Luca offers a Milanese-style Black Angus Tenderloin on a bed of potato puree and cherry confit. A Dark Chocolate Mille-Feuillewith mascarpone cream and raspberries rounds-off this gastronomic experience. (S$ 90.00++/person)

For one day only, on Tuesday April 19th, be dazzled by Sardinia’s finest cuisine as ALBA 1836 unveils World Gourmet Summit’s featured menu “Sardinia: The Emerald of the Mediterranean’’.

The exclusive 5-course degustation menu is inspired by the beauty of Sardinia’s culinary culture which brings together food from the sea and land.

This gastronomic experience begins with a delicious Tuna Tartar dressed in fine extra virgin olive oil and lemon, olives, capers, fresh artichoke salad and mullet Bottarga from Cabras. Second course comprises of a fresh Maine Lobster Catalana style, marinated in extra virgin olive oil, red onion, lemon and heirloom tomatoes. A must-try item follows as Chef Luca prepares his Typical Sardinian Ravioli, with potatoes mint and pecorino on butter and bottarga sauce. Roasted Suckling Pig, prepared with a mille-feuille of potato and goat’s cheese with a side of broad beans completes the savoury part of the menu before finishing with “Seadas”, a traditional Sardinian fritter known the world-over for its perfect harmonious blend of sweet & salty.
