Strategically located upon a verdant knoll amidst 90 hectares of tropical landscaped resort grounds, AYANA’s new Dava Bar & Grill Restaurant takes Bali’s seafood grill and steakhouse experience to a whole new level.
Dava’s chic atmosphere welcomes foodies of all ages to sit back and relax with their favourite beverage, while revealing a fiery culinary performance as a talented team of chefs work their magic.
Located adjacent to AYANA’s elegant River Pool, Dava’s elevated positioning takes full advantage of the resort’s renowned sunset and ocean views. Open at 6pm every evening, the Martini Bar is the perfect place to meet friends and family for classic and inspired gastronomic cocktails from the celebrated menu. At 7pm, dinner service begins.
After enjoying a top shelf martini, or two, to kick-start the evening’s festivities, guests are welcome to explore the walk-in wine cellar, where an intriguing selection of new world wines await to be tasted by the glass, thanks to an enomatic wine dispenser. Anti-oxidization technology maintains a bottle’s purity for up to three weeks after opening, so guests may try several different wines by the glass in one evening, allowing for the ultimate wine tasting experience.
An innovative cold appetiser, salad and soup menu caters to diverse palates including classics such as mouth-watering lobster bisque and a shrimp cocktail served with a twist, complemented by whiskey cocktail sauce, quail egg and caviar. The chef’s grilled white asparagus is prepared with coddled egg, prosciutto and black truffle vinaigrette. Plucked straight from the Indian Ocean by Jimbaran’s famous fishermen, the yellow fin tuna tartar is accompanied by local avocado, crispy shallots and a soy citrus dressing.
The Grill menu section features satisfying culinary works of art such as the grain-fed, 200-day aged stockyard gold striploin, perfectly marbled stockyard silver label wagyu tenderloin, Australian lamb chops, and Canadian lobster. Each dish may be complemented by an extensive selection of side dishes including truffle mash potato, double baked cheese potato, creamy spinach with parmesan and tempura onion rings. Dava’s house specialty is roasted boneless suckling pig, served with an inventive jung papaya salad, steamed rice and flavourful barbeque sauce.
Striving to offer a fresh approach to the grill dining experience, a beef sommelier attends the dining room each evening, moving from table-to-table and assisting diners with customised beef selections and preparations. A salt sommelier visits each table with a seductive cart brimming with several selections of premium salt.
In addition to seating up to 94 guests in the dining area and 16 in the wine lounge area, private events may be hosted within two private dining rooms accommodating up to ten to 12 people each. Reflecting AYANA’s relaxed five-star lifestyle, a sleek VIP wine lounge is appointed with four tables of up to four guests each, customisable for celebrations ranging from two to 16 people.
Dava’s favourite breakfast continues as an AYANA tradition as guests are treated to fresh juices poured at the table, a healthy selection of a la carte and buffet selections, classic favourites and modern fare.
