From 21 to 28 June 2019, ignite your culinary senses at Saffron Restaurant, Banyan Tree Bintan’s signature Thai dining establishment, with a tantalising ensemble of curated flavours and an immersive cooking demonstration not to be missed.

Thai Chef de Cuisine, Chef Porntip Eumanan from Banyan Tree Bangkok, returns to helm the bona fide dining affair in the 3rd edition of the week-long culinary exchange between Banyan Tree Bintan and its sister hotel. Chef Porntip has been the instrumental right-hand to the Corporate Master Chef as part of the Saffron Corporate Culinary taskforce, supporting trainings, menu development and promotions across all Saffron restaurants at Banyan Tree hotels worldwide.

In line with Saffron’s ethos of harmonising indigenous ingredients and authentic cooking techniques to produce modern flavours, diners can treat their tastebuds to enhanced four and six-course set dinners featuring contemporary twists on traditional Thai dishes. These will be complemented with wine pairings to perfect the epicurean experience.

Whet the palate with fresh starters like Yum Hoi Shel Yang (search scallop with saffron rice salad, local Thai herbs and edible flowers), or distinctive mains such as Khao Soi Chieng Mai (slow cooked beef short ribs with longan and egg noodles in Chiang Mai curry sauce). Cap the gastronomic journey with a sweet finish from Khanom Wan Ruam (pumpkin coconut ice cream served with mango crème brûlée and coconut dumplings stuffed with sweet red bean).

Take your dining experience a step further and learn from the maestro herself, Chef Porntip, as she dishes out tips and tricks on how to make the perfect Nue Yang Nam Tok (marinated grilled beef tenderloin salad with Thai herbs) and Gaeng Kiew Wan Gai (Thai green curry chicken, eggplants and sweet basil leaves)complete with a satisfying lunch to follow the demonstration.

To further mark the epicurean celebration of all things Thai, XANA Beach Club, Laguna Bintan’s hip beach club destination, will also serve up an all-you-can-eat spread of Thai delights. Look forward to unlimited servings of quintessential appetisers and salads, from Por Pia Phak (deep fried vegetable spring roll), to Pla Nue Takai Onn (spicy beef salad with young lemongrass) and Gai Yang (grilled chicken with chili, shallots and tamarind sauce). Then warm up the belly with a choice of Tom Kha Gai (chicken, coconut and lemongrass soup) or Tom Yum Goong (traditional spicy prawns, lemongrass and galangal soup).

Thai staples await when it comes to the mains, whether it’s the aromatic Massaman Nue (massaman curry beef) or the piquant Pla Nung Ma Nao (steamed fish with spicy lime and garlic sauce). Don’t forget to save room for an assortment of sweet treats, like the all-time favourite Kao Niew Mamuang (mango sticky rice) or Khanom Lod ChonKati (rice flour jelly, sweet coconut milk and Thai melon).
