Beachhouse At the Moana Celebrates the Summer Season with Sake Pairings

In its latest installment of “Pairings,” the Beachhouse at the Moana brings together the sophistication of sake with the celebrated cuisine of Chef Colin Sato at the Moana Surfrider on Friday, August 16 at 6 p.m.http://www.tourismlegal.com.au/

The four-course menu is bound to delight gourmands as each dish is paired perfectly with sake by Dan Fullick, a Level 2 Advanced Sake Specialist. The Sake Pairings menu includes the following:

1ST COURSE | Shio Koji Cured Kampachi Crudo

Radish, cucumber, shio koji ponzu

Paired with Hakutsuru “Sho-Une”Junmai Daiginjo – Hyogo

2ND COURSE | Tako Yaki

Twice cooked octopus, yamaimo croquette, wasabi aioli, bonito, nitsume sauce

Paired with Yoshinogawa “Winter Warrior” Junmai Ginjo – Niigata

3RD COURSE | Truffled Dungenous Crab “Congee”

Truffle crab buckwheat porridge, quail egg, crispy ginger, kabayaki

Paired with Itami “Onigoroshi” Junmai – Hyogo

4TH COURSE | Smoked Duck and Foie Gras

Kinako sweet potato puree, braised turnip, ham dashi

Paired with Bunzaemon Junmai Ginjo – Saga

DESSERT | Chef Carmen’s Creation

Umeshu, yuzu, Ume verrine, with Mochi, orange segments and caramelized peanuts

Paired with Murai Nigori Genshu – Aomori

Sake is the ultimate beverage for food-pairing because it lifts the nuance of each flavor in complex dishes.  The senses are delighted as even the subtlest of flavors or textures are given new heights with the addition of Japan’s signature beverage” says Fullick. His passion for sake is tied not only to the history and variety of this very unique beverage, but also to the joy he feels when helping non-sake drinkers become devotees after an authentic Japanese sake experience.

The cost of Sake Pairings at the Beachhouse at the Moana is $120 per person, plus tax and gratuity.  Seating is limited and reservations are required.  Kama‘āina will receive a 15 percent discount.  Call the Dining Desk at 808-921-4600 to reserve your seat.  Complimentary four-hour valet parking is available.

Moana’s Pairings program couples a winemaker, brew master or master distiller with the cuisine of Chef Colin Sato, who advanced to the finals of Marriott International’s rigorous Masters of the Craft Culinary Competition in 2018. The final Pairings dinner is scheduled on October 4: Oktoberfest Dates, menus and prices are subject to change.
