Ben Leung joins Shangri-La Hotel, Qingdao as Chinese Executive Chef

Ben Leung joins Shangri-La Hotel, Qingdao as Chinese Executive Chef. In this new capacity, he will be responsible for Shang Palace and the Chinese banquet’s food quality standard. He will also oversee the overall operation of the Chinese kitchens, making sure that guests experience the city’s finest selection of Cantonese cuisine, seafood and local specialties.

Chef Leung originates from Hong Kong and has more than 30 years culinary experience in the industry. His career path encompassed cities, such as Hong Kong, Kuala Lumpur, Beijing, Shanghai, Xian and Hainan, and mostly with international 5-star hotels. He is well known for both his classic and modern approach to Cantonese cuisine, seafood and Shanxi cuisine, and his specialised skill of utilising Southeast Asian herbs and spices to create dishes.

Chef Leung’s approach to food is one of enjoyment and sharing. He insists on only using the freshest seasonal ingredients in his cooking because he believes the products’ freshness is the main driver for the perfect cuisine. He combines traditional flavours fused with modern ingredients and presentations with cooking techniques perfected over years of practice.

Chef Leung dedicates himself not only to sharing his enthusiasm and knowledge of food with friends and guests, but also to training chefs to ensure that the next generation learns the passion for food from his dishes.

His signature dishes include Braised South Africa Abalone in Classic Style, Crispy Golden Cups filled with Minced Deer Meat, Blanched Spotted Garoupa Fish in Consommé of Celery and White Vinegar, Chef Leung’s Minced Fish Chowder and King Prawn with Salted Egg and Water Chestnut.

In 2006, Chef Leung received the “Most Honorable Golden Bowl Award” in Malaysia at the International 5-Star Hotel Chefs Culinary Competition.
