BRISBANE: Emporium Hotel’s distinguished Rooftop Honey really is, the Bee’s Knees as the hotels gets another EARTHCHECK tick.
The Emporium Hotel has welcomed celebrities from all walks of life – stage and screen stars, rock and roll royalty and all in between – but perhaps the most important of all their guests are those that are making the world go around – the bees that call the Emporium Rooftop home!
Three years ago the Emporium Hotel established a hive of Honey Bees atop the hotel, and now this industrious family of buzzing flyers produces 80kgs a year of great tasting, locally pollinated, sweet honey!
General Manager of the hotel Peter Savoff said establishing the Honey Bee hive was one of the ways the hotel gives back to the environment, and was part of the hotel’s award winning sustainability program. “Bees need to be nurtured; they hold the keys to keeping our environment and food cycle alive and well, so anything we can do, we are happy to,” he said. “We benefit from receiving gorgeous local honey from our bees, used as in-room gifts and in our cocktails and food dishes. Plus, the action helps to “green” downtown Brisbane, as the bee’s pollinate millions of flowers, plants and trees throughout the city,” he said.
*The hotel was recently audited and its Silver Certification was reconfirmed by the internationally accredited benchmarking organisation EarthCheck. Emporium Hotel has been working with EarthCheck since April 2008.

o The Bee’s Knees – it’s quite the buzz!! Made with Beefeater Gin, lemon, ‘E’ Rooftop Honey, smoked lavender and Crème De Violet Liquor, garnished with bee pollen and lavender flower (also grown on the roof); it is a feast for the senses and a total treat from Mother Earth!
o The Smoked Rosemary & Olive is the signature sip at the bar, perfect for those who enjoy the smooth and sophisticated flavours of Gin Mare, Noilly Pratt Dry Vermouth incorporated with organic ‘E’ Rooftop Honey and smoked Rosemary, all topped off with classic Olive.
o Penicillin – A remedy by name and revitalising by nature, this cocktail features Rooftop Honey mixed with 19.0 Chivas Regal Scotch Whisky, Lemon, House Ginger Beer and topped off with a delicate assortment of Candied Ginger.
o Smoked Jalaprinha – Inspired by the National Cocktail of Brazil, awaken the taste buds with 20.0 Leblon, Laiphroaig, Lime mixed with ‘E’ Rooftop Honey, Paprika, Fresh Muddled Jalapeno and Del Maguey Vida.
