Just when the summer heat begins to subside, the intermingling of autumn hues is already well underway as Master Chef Nicolas Cloiseau has boldly redefined truffles with seven new recipes in three gift box sets to brighten up the season from 10 November 2015.
Since its creation by a chocolatier near Chambéry in Savoie back in the 19th century, truffle has long been an all-time favourite among chocolate lovers. At La Maison du Chocolat, Master Chef Nicolas Cloiseau has decided to play with the colours and freshen up this French classic delicacy.
“Amber, fuchsia, saffron, and gold set the tone of this fully liberated Truffle Collection,” hummed Master Chef Nicolas Cloiseau. “Each morsel of the air whipped ganache ensures a slow, sensuous melt on the palate.”
From the exquisite custom colours to the perfectly whipped, light-as-air texture cradled in a thin chocolate shell, Master Chef Nicolas Cloiseau presents an artisanal collection of surprises, a new expression of a legend: the truffle, resolutely timeless.
The Plain Dark Truffles gift box is available in 2pcs (HKD 58), 12pcs (HKD 315), 30pcs (HKD 685), and 48pcs (HKD 1,000).
Plain Dark Truffle showcases perfection of a dark chocolate ganache with bold round flavours featuring a divine, airy sensation. It highlights creamy and smooth whipped ganache dusted with cocoa powder
The Flavoured Truffles emerge into a new palette of interpretations: acidulous blackcurrant, sassy and fruity, yuzu with fresh pepper, and a caramel toffee enhanced with fleur de sel (sea salt). The assortment gift box with all three flavours is available in 30pcs (HKD 710) and 48pcs (HKD 1,070).
The Caramel Truffle features chocolate from Venezuela whipped into ganache full of vanilla and Guérande fleur de sel, carrying milky caramelised notes
The Blackcurrant Truffle brings together chocolate from Madagascar infused with buds of carefully selected blackcurrant from Burgundy, giving out fruity and acidulous notes
The Citrus Fruit Truffle highlights chocolate from Madagascar infused with wild yuzu and a hint of Sancho pepper, releasing a blend of lemon, grapefruit and green mandarin on the palette
In the Alcoholic Truffles, the bouquets of the eaux-de-vie and clean spirits shade their flavours. Saké, Whisky and Cognac succumb to the cacao, creating a perfect harmony of the aromatic typicity. The pairing of chocolate and spirits reveals floral, caramelised or nutty notes. The assortment gift box with three flavours is available in 30pcs (HKD 750).
