Celebrated Spanish ‘Cortador’ Showcasing Revered Art of Ibérico Ham Slicing at Alzina Spanish Asador from 12 to 18 May

One of Spain’s most acclaimed ‘cortadores’, José Manuel Hidalgo, will be introducing Hong Kong epicureans to an exclusive showcase of Ibérico ham slicing at acclaimed new Spanish restaurant Alzina Spanish Asador in Tsim Sha Tsui from 12 to 18 May, which also coincides with Mother’s Day weekend celebration.

In Spain, cutting prized ham from Spain’s special Ibérico breed is not just a profession, but an art – and José Manuel Hidalgo is a multi-award winningcortador de jamón’, or Iberian ham cutter, with accolades including 2014 World Champion.

The esteemed artisan will be bringing the true taste of the prized Iberian ham to Hong Kong, demonstrating the cutting and serving skills normally reserved for prestigious restaurants and important banquets or ceremonies in Spain.

The use of slicing machines are out of the question when it comes to perfect ham slicing because a machine’s heat alters the taste and melts the fat, an essential part of the gastronomic experience. The Champion will explain in depth the gist of professional ham slicing and help guests understand the key importance of a good fat proportion, and even how to taste the ham correctly.

“Many Hong Kong epicureans may have heard the term ‘Jamón Ibérico’ a lot, but possibly not quite understood what it actually means.With his 18 years of experience at the pinnacle of his artisan craft, José will share the historic, intimate relationship between Spaniards and Jamón Ibérico,” said Chef Juanjo Carrillo, Executive Chef of Alzina Spanish Asador.

The prized Ibérico is sourced from family-run Garimori of Salamanca (www.garimori.es), a leading breeder and exporter of the ham from free-range pigs prized worldwide. “They also feed on acorns, giving their meat what aficionados describe as an incomparably sweet and nutty flavour,” said Chef Carrillo.

The Ibérico promotion will be presented in partnership with leading Hong Kong gourmet food supplier Silco, and a special a la carte menu featuring specialty products will also be presented from 12 to 18 May.

Along with José Manuel Hidalgo’s sliced Garimori Ibérico (HK$208), the Silco menu will feature ‘Salmorejo’ (cold tomato soup) with Ibérico Garimori (HK$54), Spanish White Prawn Fritter (HK$95), ‘Chistorra Alejandro’ (Spanish sausage) with Eggs (HK$104), Ibérico BBQ Skewers (HK$152), “Pulpo o Feira” in Our Way (Galician-style Octopus Leg Confit) (HK$149), Crispy King Tiger Prawns wrapped in Kataifi Pastry (HK$305), and an interesting dessert trio ofTomato Bread with Salami (HK$63) which features Cheese Cake Mousse with Raspberry Jelly (Tomato), ‘Briox de Nanterre’ with Butter (Bread) and Chocolate and Dried Fruit (Salami).

The hand-crafted 36-months aged Garimori Ibérico will be available for weekend brunch and  dinner during the showcase, priced HK$298, which also coincides with Mother’s Day, when it can be enjoyed as a unique floral-shaped platter for mums and seafood themed special dinner menu on 13 and 14 May. 

The Mother’s Day dinner will feature a special grilled seafood “Parrillada de Pescados y Mariscos” platter (HK$888) ofSpanish turbot, whole Boston lobster, tiger prawns, deep-fried baby squid, New Zealand little neck clams, Spanish cuttlefish and scallops in garlic, white wine, chilli and butter.

Signature dishes from the a la carte menu will continue to be served during Jose’s visit as well as Mother’s Day, such as the “Caldoso de Bogavante” (HK$248), a juicy red lobster rice cooked with one whole lobster in a Spanish casserole, Charcoal Grilled Octopus Leg with Chimichurri Sauce (HK$238), Braised Spicy Chorizo in Sherry Wine (HK$78) and more. 

Alzina Spanish Asador is newly-opened on the corner of Hart Avenue, Tsim Sha Tsui, dedicated to bringing an ‘Authentic Taste of Spain’ to Hong Kong.  Alzina is Spanish for ‘oak’, representing its signature Ibérico, fed on acorns, and ‘asador’ is a Spanish grill, or BBQ, representing the grilled dishes that take centre stage, including traditional Spanish suckling pig.

The menu also features both traditional and innovative tapas, a colourful choice of paellas, a range of Spanish rice delicacies and enticing vegan or vegetarian options, rounded-off with an appealing selection of desserts, Asian-inspired sangria and a variety of Spanish wines and beers.

Alzina Spanish Asador is located on G/F, 29-31, Chatham Road South (entrance at Hart Avenue), Tsim Sha Tsui, Kowloon, Hong Kong.  All prices are subject to 10% service charge.

It opens from 12:00 noon to 2:30 pm on weekdays; 12:00 noon to 3:00 pm on weekends, and 6 pm to 11 pm every night.
