Chia Kiat Fui Presents Dim Sum Delights at Shang Palace

Chia Kiat Fui, the executive dim sum chef at Shang Palace, presents Dim Sum Delights featuring more than 10 new dim sum items starting this April.

Chef Chia, who is originally from Malaysia, has created a new set of dishes to entice guests’ palates with his modern culinary approach to the authentic dim sum tradition.  Guests can enjoy new selections of dumplings, buns and Chinese desserts at the hotel’s signature Chinese restaurant daily.
“I created these menus after spending more than a year in Surabaya, knowing that the local market is always hungry for something new and unique.  Some of my creations are really inspired by the local ingredients I have known while I’ve been here”, said Chef Chia.
Guest can indulge in such new dumplings as Steamed Crystal Spinach with Caviar and Crab Meat Dumplings, Four Happiness Dumplings with Shrimp and Pumpkin Paste and Steamed Black Fungus Vegetable Dumplings.
To complement the set, Chef Chia has prepared savoury items for guest’s enjoyment, including Deep-Fried Prawn Balls coated with Corn Flakes, Crispy Rice Paper Roll with Salmon and Banana and Flaky Barbeque with Pistachios.
To top off his creations, the chef has created desserts in which guests can indulge their sweet tooth, such as Baked Chocolate Egg Tarts, refreshing Jell-O of Lemon Grass with Lime Sorbet and Pan-Fried Crispy Pancake topped with Homemade Ice Cream.
