China World Summit Wing, Beijing Appoints Deivid Paiva As Chef de Cuisine of Grill 79

China World Summit Wing, Beijing, a Shangri-La hotel, announces the appointment of Chef Deivid Paiva as the new chef de cuisine of Grill 79, the hotel’s signature restaurant.

Chef Paiva will join the dedicated culinary team to continue to deliver award-winning and memorable Western-style cuisine to all guests in the restaurant located on level 79 of the towering building, matched by an unparalleled view of the city skyline.


Armed with a certificate in food service management from Cornell School of Hotel Administration, Chef Paiva brings more than 10 years of culinary experience to Grill 79, having previously worked in Europe, Africa and the Middle East.

He began his career at five-star hotels in his native Portugal, picking up hotel-opening experience along the way. His experience also includes two-and-half years in an award-winning Michelin-starred restaurant in Ireland, where he was in the team that hosted Queen Elizabeth II at a gala dinner in Dublin in 2011.

He later moved to United Arab Emirates to lead culinary teams at award-winning restaurants before joining Shangri-La Hotel, Doha as chef de cuisine of Yabby. The restaurant offers Doha’s largest live seafood selection, complemented by a wine room and a teppanyaki counter. Under Chef Paiva’s leadership, the restaurant was awarded “Best Friday Brunch” in Doha at the FACT Dining Awards Doha 2016.

On his cooking philosophy, Chef Paiva believes in respecting the value of all the ingredients and their origins in his kitchen.

“When you respect every vegetable and meat that goes into your kitchen, even as underrated as a carrot, only then can you call yourself a true cook. My cuisine is ingredient and product driven, which means that I value the quality of every vegetable that I use. I always strive to maximise every part of that product in my cooking,” the chef said.

He also appreciates the pride and hard work that farmers, fishermen and livestock growers put into delivering products with quality.

Chef Paiva will be responsible for the overall food quality standards and kitchen operations, as well as oversee the conceptualisation and operation of exciting promotions at Grill 79 in the future.

He looks forward to “the vast possibilities of combining quality ingredients and products using the best possible techniques – a fusion of East and the West, inviting the age of modernity in cuisine, but still with deep respect to its tradition.”

Grill 79 commands breath-taking views of the capital city’s skyline. With nature as the main inspiration behind its menu, the art of dining can be savoured through a delicate balance of flavours mingling from wild and fresh ingredients each season has to offer. The restaurant also offers one of the most extensive wine lists in Beijing, with premium selections of New World wines noted by the famous Wine Spectator magazine.
