Nadaman at China World Summit Wing, Beijing introduces the creative “Saika” set course, an original creation by Head Chef Kubota Akihiro. The set menu is available for dinner only and priced at RMB960+ per person, subject to a 15 per cent service charge.
A treat for the five senses, the innovative “Saika” menu is Chef Akihiro’s expert rendition of Nadaman’s traditional kaiseki cuisine, modern food culture and superior ingredients of the finest quality.
The dinner begins on a fresh note, with indulgent treats from the ocean – Spicy Sea Cucumber Rice Roll with Pickled Ginger, Crab and Scampi Salad with Wakami and Black Caviar and Fresh Scallops Tempura with Seaweed. The popular sashimi course is given a twist with an accompanying hot sesame dipping sauce, perfect with fresh amberjack, Japanese tuna and Norwegian salmon.
The dinner continues with modern interpretations of classic dishes – Steamed Egg Custard is enhanced with fragrant foie gras and truffle oil, and the comforting French Onion Soup is presented with a traditional Japanese broth in a teapot, Onion Tempura and Diced Silken Tofu.
Guests can indulge in an assortment of popular meats and seafood served with fragrant Garlic Fried Rice from the teppan – Grilled Fillet Steak spiced with tangy Sanshu Pepper, the Malaysian-inspired Ginger Pork Satay in addictive Peanut Gravy and Lobster and Shitake Mushroom in Yuzu Mustard Cream. Diners may end the meal on a sweet note with the creative foie gras ice cream, freshly concocted in the kitchen. The premium treat is topped with roasted walnuts, raisins and fig sauce.
Nadaman also offers comprehensive a la carte options and a wide selection of lunch and dinner sets featuring authentic Japanese signature dishes. Fans of the sizzling-hot plate can indulge in teppanyaki set menus boasting meat and seafood main courses, while vegetarians will not be left out with a meat-free set menu available for lunch and dinner.
