Black Sheep Restaurants announces its third opening in 2017 with Osteria Marzia, a coastal Italian restaurant inspired by the colourful and diverse cuisine of the nation’s scenic seaside regions.

Osteria Marzia is a snapshot of summer road trips taken by Black Sheep Restaurants co-founders, Christopher Mark and Syed Asim Hussain. The picturesque drive along the Italian coast is peppered with various family-run osterias, which pride themselves on serving the best local specialities and indigenous wines.

“As you travel from north to south, the flavours change from town to town” says Mark, “You can see North African references in Sicily with saffron, pistachio, rosewater and cinnamon being used in classic recipes. Towards the East, regions like Puglia are in close proximity to Greece and therefore share its climate and ingredients.”

The menu at Osteria Marzia is a culinary roadmap honouring these cooking traditions, with bright, refreshing flavours and the use of seasonal produce prominent across its offering of crudos, salads, pastas and grilled mains. Puglian raw bar favourites like Tuna tartar with celery, orange and calabrese crumbs as well as Red prawn with sorrento lemon and olive oil are prepared with a Mediterranean touch while housemade pastas like the Moorish-influenced Bucatini con sarde speak to their regional origins. A selection of fish made with classic preparations, like Turbot Pizzaiola and Branzino Aqua Pazzaare served fresh from the grill alongside meat items like spicy Chicken calabrese and Lombata Marzia, beef sirloin grilled with anchovy butter and shallots.

Guests are transported from the bustling streets of Wan Chai as they step into the restaurant’s airy dining room, where vibrant dishes arrive at every table on custom hand-painted Positano ceramics. Designed by Substance, a Hong Kong-based studio, the interiors are reminiscent of a sunny maritime holiday in Italy, with large buoy-like lanterns suspended from the soaring ceilings, lighting up the space with a soft romantic glow. Sea-blue banquette booths surround a feature bar decorated with custom tiles of the same ocean hue, while a curved wood bar mirrors ship architecture, perfectly encapsulating the name ‘Marzia’, meaning ‘of the sea.’

Head Chef Luca Marinelli brings his proud Italian heritage, finessed cooking style and love of pristine seafood to his role.  Marinelli began his career apprenticing under Mauro Uliassi at the two-starred chef’s eponymous restaurant by the coast of Le Marche. The new opening takes him back to his roots in Italy, returning to the coastal towns that he visited often as a child to research the cuisine that he loves most.

Osteria Marzia will be located in The Fleming (Wan Chai), as part of the 66-room boutique hotel’s full renovation, and is set to welcome guests from September 2017.
