COMO Shambhala Urban Escape and Traymore Restaurant make their mark on Miami Beach dining and wellness scene

When COMO Hotels and Resorts opened its first stateside hotel in Miami in March, devotees got excited — among them, regulars of COMO Shambhala Retreat at Parrot Cay in the nearby Turks and Caicos, who have become loyal to the company’s holistic approach to wellness.

Now that COMO has arrived with Metropolitan by COMO, Miami Beach resident guests and locals can experience intensely rewarding treatments at the new Collins Avenue hotel’s COMO Shambhala Urban Escape.

And the world-class cuisine that is an integral part of the COMO experience can now be enjoyed at the Traymore Restaurant. The restaurants within all of the group’s properties, including multi-award winning restaurants in London and Bangkok, draw on the traditional tastes and flavours of their region. Metropolitan by COMO, Miami Beach, in a classically restored Art Deco building, is no different. Each dish is created with a contemporary flair to match the city’s dynamic spirit.

Fast becoming an essential destination to indulge in Florida’s best seasonal seafood – including stone crabs and Key West pink shrimp – the Traymore not only attracts visitors to the city but is already an integral part of the Miami dining scene.  The Art Deco-inspired space of the Traymore’s gin bar concept (the first in Miami) has been re-imagined by Italian designer Paola Navone. Located in the buzzing hotel lobby, the walls drip with pink and pistachio pastel shades. The bar’s dedicated Gin Club features over 30 artisanal gins.

The menus, which are forward-thinking in approach but reference classic American favourites, have been devised by Executive Chef Jonathan Lane. The Kansas City-born chef earned plaudits for his work in Chicago, Las Vegas and New York before joining Metropolitan Miami.

“The Traymore is a farm-to-table driven restaurant, sourcing the best fish, beef and poultry in Florida and the United States,” says Lane, “I want to highlight the product at its peak, so when the guest is enjoying a meal in the restaurant they are truly amazed by what they are eating, which owes everything to its freshness.”

Metropolitan Miami Beach joins COMO’s two other Metropolitan hotels in London and Bangkok. To celebrate the Miami opening guests can take advantage of the ‘Grand Opening Rate’, with prices from US$299 per night for a City Room when booked before Aug 31st 2014. Alternatively, guests can enjoy up to 15 per cent off the COMO daily rate when they choose the ‘Advance Purchase’ option by reserving and paying a minimum of seven days prior to arrival.
