Crystal Jade Jiang Nan in Wanchai and Yuen Long Celebrating the Season of Rejuvenation with Spring Bamboo and Seasonal Delicacies

Master chefs at Crystal Jade Jiang Nan restaurants in Wanchai and Yuen Long are celebrating the season for spring bamboo with an exclusive menu paying homage to the crispy and juicy shoots at their finest, along with seasonal specialities of the renowned regional cuisine.

The fresh shoots are a famous delicacy of the brand’s signature Jiangsu, Zhejiang, Wuxi and Shanghai cuisine from south of the Yangtze River.  Savoury and crunchy with notes of sweetness and nuttiness, similar to the heart of palm, they are harvested only over a brief window on sprouting between mid-March and end April before becoming tough and woody with age.  In Chinese medicine, they also traditionally treat bronchial and respiratory ailments.

Crystal Jade Jiang Nan’s culinary team is celebrating this short, delightful season with a ‘Spring Bamboo Menu’ of classic specialties, featuring Sauteed Mandarin Fish Fillets with Spring Bamboo Shoot and Preserved Vegetable (HK$228) combines the shoots with pickled ‘Snow Vegetable’ mustard greens; and Spring Bamboo Tossed with Spicy Sauce (HK$128), in mouth-numbing spicy sauce with a Jiang Nan twist.

While Jiang Nan cuisine is known for sweet soy sauce braised meats, Crystal Jade Jiang Nan presents two hearty meat specialties with bamboo shoot: Braised Pork Belly(HK$188)stewed for over 3 hours, achieving a sleek and seductively sweet note; and Sauteed Beef Tenderloin Slices (HK$198), sauteed until perfectly tender and succulent, flavoured more delicately than the familiar Cantonese version.

The season of rejuvenation is also celebrated with Braised Spring Bamboo Shoot (HK$168). Diners may opt for indulging in the seasonal gems with the culinary team’s iconicBrown Sauce, prepared in the region’s signature sauce embracing light and dark soy, Shaoxing wine and sugar; or Dried Shrimp Roe, adding a little umami, but not overpowering.

Along with spring bamboo, Crystal Jade Jiang Nan’s native Jiang Nan master chefs are also refreshing the menu with several new a la carte spring favourites from the ‘Land of Fish and Rice’.  Hangzhou-style Handmade Fish Balls in Vegetable Soup (HK$198 per bowl/HK$52 per person) is a vibrant green blended soup featuring fish balls made with fresh grass carp, distinctive from Cantonese fish balls for its soufflé-like texture and richness of fresh fish flavour.  While Sauteed Prawns with Salted Egg Yolk (HK$168) is fried to a golden-brown perfection and topped off with a delicious coat of salted egg yolk, served rice crackers and seaweed, bringing an irresistible aroma.

The crowning spring classic is seasonal Steamed Hilsa Herring (HK$998 for half; HK$1,980 for whole), a light and healthy delicacy steamed with Chinese Jinghua ham, mushroom and rice wine.

New desserts highlight Fried Pumpkin Cake (HK$48 for 4), known for its soft and delicate texture, stuffed with luscious red bean paste, while ‘Ningbo’ Green Dumplings with Red Bean Stuffing (HK$48 for 3) is widely known as a symbolic dish of family reunion and happiness, promises to end the meal with a sweet note.
