Daydream’s Mermaids Restaurant Refurbished

Mermaids Shoot-14-EditDaydream Island Resort and Spa’s signature restaurant Mermaids has undergone a refurbishment ahead of the introduction of a new menu as it evolves into one of the most authentic resort dining experiences in the Whitsundays.

Daydream’s director of Food and Beverage Oliver Strickland described Mermaids cuisine direction as modern Australian with an emphasis on location and reflecting its position in the Asia Pacific basin.

“Mermaids is a restaurant which very much has a sense of place, located by the water in one of Australia’s tropical holiday playgrounds,” Mr Strickland said.

“The emphasis is on fresh, and prime products sourced locally featuring fish, seafood, prime quality Australian meats and tropical fruit.

“During the day Mermaids is classic beach-club style, offering a relaxed setting with great views of the Whitsunday Passage and at night, it evolves into a modern, intimate dining experience with a sense of space.”

Seating 150 guests Mermaids has undergone a soft driftwood-style refurbishment with a boathouse theme that gives it a contemporary look and feel with modern earthy colours.

The restaurant also includes prints of the old schooner Daydream paying homage to the history of the island.

Jozsef Nyeste has been appointed executive chef of Daydream Island Resort and Spa and he will be overseeing the transition to a new menu at Mermaids in the near future. Jozsef joins Daydream Island from Heron Island Resort where he was that property’s executive chef.

Daydream Island Resort and Spa chief executive officer Scott Wilkinson said he was delighted with the new look Mermaids.

“This is our signature dining venue and we’re delighted that our new owners have invested into making it a destination dining experience in its own right,” Mr Wilkinson said.

“The feedback from guests so far has been very pleasing with changes being very well received.”
