Story Bridge Hotel’s signature dining destination, Deery’s Restaurant & Smokehouse, has launched a delicious new Spring menu.
Created by Deery’s Restaurant Head Chef, Sebastian Calais, and Story Bridge Hotel Executive Chef, Matthew Fosker, the new menu will prove irresistible to foodies; featuring seasonal updates on some of its favourite dishes, Smokehouse signatures and of course its famous char-grilled steaks.
Work up an appetite with flavoursome entrées such as Pan fried calamari & chorizo seco finished with sherry vinegar & Marsala and served with avocado, fresh coriander & lime puree; Slow braised lamb shoulder croquettes with cucumber & mint yoghurt, sumac salt; and Confit & caramelised pork belly with a salad of watermelon, shaved fennel, carrot, spring onions,
fresh herbs & mixed seeds, nuoc cham dressing.
Or treat your tastebuds to ‘Besmoke’ plates including Marinated & smoked venison carpaccio; and Cold smoked tiger prawns & coriander ravioles, sure to leave you salivating for the next course.
Mains include tantalising options like Squid ink risotto with seared smoked tiger prawns & scallops, clams served with saffron beurre blanc; House smoked & roasted free range chicken with smoked bacon & potato cake, buttered greens, herb jus; and Deery’s superb Australian steaks, from the succulent Eye Fillet to a 400g Black Angus rump, and the mouth-watering 12-hour slow cooked short ribs on the bone – all served with your choice of sauce.
