EKKA’s Paddock to Plate Wagyu Champion Cuts at Stokehouse Q: ALL AUGUST

In what could be a case of culinary insider trading – where the diners are the winners – Stokehouse Q Executive Chef Richard Ousby was so impressed in judging this year’s Paddock to Palate Wagyu Challenge at the EKKA, that he has secured a selection of cuts from the champions to be offered at the iconic restaurant throughout August. The cuts will be unadorned, served with a simple jus, to allow diners to appreciate the texture and flavours of the beef, prepared perfectly by the Stokehouse Q kitchen.

Celebrating its 20th anniversary in 2017, the RNA Paddock to Palate Challenge is an EKKA institution. This competition allows Australia’s premium beef producers to showcase their highest-quality stock and promote their product across Australia.

Stokehouse Q’s Richard Ousby got a sneak preview of the quality of the entrants recently when he was invited to be a part of the judging panel for the Wagyu Challenge. “It was interesting to see the variance between all the different entrants as they were given exactly the same feed for the exact same time. The variance in flavour came down to genetics and breeding which was fascinating,” he said.

“I’m very excited to offer Wagyu of this calibre on the Stokehouse Q menu for all of August.”

The winners of the Paddock to Palate Wagyu Challenge will be announced at an awards presentation breakfast this Friday, August 11th.
