elk Restaurant’s Winemakers Dinner on Wednesday 14th September, at Falls Creek Alpine Resort, will be a combination of Toni Plabou, winemaker extraordinaire for the last six years at Gapstead Wines, plus the culinary prowess of its chefs Matt Hallam and Zoran Miller.
Toni Plabou is a Western Australian of Catalonian heritage. He isn’t just a well-credentialed winemaker he also has a Honours Degree in Philosophy and French. He’s worked at Houghton Wines, in the Swan Valley, Coldstream Hills, Yarra Valley Evans & Tates, Sunraysia Riverina, Berton Wines, Riverina Domaine Lafage, Roussillon,Vignerons de Casinca, Corsica,Vigneron de Rabastens, Gaillac and Chateau Auris, Corbières. He was an Associate Judge at the National Wine Show in Canberra and his interests include Southern European Food, Wine and Cooking.
It will be a fascinating evening starting at 7pm with Chef Matt’s sensational parmesan shortbreads accompanied by Ballerina Canopy Pinot Noir Chardonnay a stunning sparkling.
Entrée: Confit Salmon with “Spring Mustard Fruits.” Plus Valley selection Pinot Gris & Valley Selection Riesling.
Main course: Duo of lamb featuring smoked lamb rump with blood plum jus, rosemary & hazelnut crusted double lamb lollipops with sticky jus accompanied by Ballerina Canopy Durif & Valley Selection Cabernet Merlot.
Dessert: A trio of passion fruit, powder puff, creme brulee and ice cream with Gapstead Moscato
