Enjoy Masterclasses at the Noosa Food & Wine Festival

If you are a foodie (or wine lover) and have a thirst for knowledge, then the Olsson’s Salts Yurt is the place to be in the Festival Village on Saturday 19 and Sunday 20 May.  Olsson’s Salts are presenting an interesting range of masterclasses from some of Australia’s best chefs, producers and winemakers. These exclusive masterclasses are a ticketed item and are only accessible with Festival Village tickets.

Saturday Masterclasses

Padre Coffee Masterclass – 10.30am $20

This masterclass presented by Fay Kamanis and Marinus Jansen of Padre Coffee will feature two very rare coffees from Colombia that have been natural processed to bring out floral and fruit flavours. Participants will work through a series of exercises to explore these flavours in the coffee.

This will encompass fresh fruit – raspberry, blueberry, lemons, lychee, mint, melon – and related residual flavours – chocolate, panella, honey – the exercises being designed to highlight these flavours and talk through how the farmers are growing and processing their coffees (and the risks involved) in order to bring out these extraordinary flavours.

Smoking With The Locals Masterclass – 11.30am $20

Join Chef Zeb Gilbert of Wasabi Restaurant and Chris Fuller from Kin Kin Native Honey as they create a truly stunning dish. They will be salt curing and smoking Charters Towers Venison with macadamia shells and Kin Kin Native Honey incorporating fresh herbs from Honeysuckle Farms.

Giovanni Pilu And Bottarga Pilu Masterclass – 12.30pm $20

Giovanni Pilu will explain how to make Bottarga and then demonstrate how to use and plate with this ancient Sicilian ingredient.  Pilu Bottarga is 100% Australian, A Grade and produced by Giovanni Pilu and Southern Fresh Seafood – working together in the Sardinian tradition.

Produced from the roe of mullet fished off the coast of Northern NSW and Queensland – simply salted with a secret blend of Olsson’s Sea Salt, pressed and air dried.  Pilu Bottarga is delicious grated over pasta, shaved over salad or on its own with crusty bread and butter and glass of white wine. Wine pairing included.

Matt Wilkinson Uses Olsson’s Salts At Home Masterclass – 1.30pm $20

Super-saucy and oh-so-dapper Matt Wilkinson, chef and owner of Melbourne eatery Pope Joan is a bit of a talker and a natural gourmand.  Matt’s style of cooking is food for people aspiring to prepare healthy, seasonal food, whether it be for family, friends, special occasions or evenings of mid-week craziness. This is your chance to hear first-hand about his food and farm-hopping adventures, and steal some of his kitchen tips and recipes to pass off as your own! He’ll be ripping out one of his all-time family favorites: quick cured beef from his first book with different types of flavoured salts.  Wine paring included.

Cape Mentelle – Quintessential Margaret River Masterclass – 2.30pm $30

Enjoy a selection of wines from one of the pioneers, and benchmark producers of the Margaret River region. Inspired by the great wines of the world, and always exploring new ways to enrich the quality of their wines.

Kirsten Tibballs Sweet Temptations Masterclass – 4.30pm $20

Join renowned pastry chef and chocolatier Kirsten Tibballs as she creates some sweet temptations.

Sunday Masterclasses

Jaci Koludrovic And Salty Sweets Masterclass 10.30am $20

Jaclyn is the mastermind behind the to-die-for desserts at Icebergs Dining Room & Bar, Bondi and The Dolphin Hotel, Surry Hills. Jaclyn will divulge the secrets to her Salted Caramel & Lime Mousse with Almonds and Raspberries, along with all the tips and tricks for recreating this at home to the awe/wonderment/amazement of your guests.

A Cheese Education Cheese Masterclass – 11.30am $20

Renowned cheese expert Peter Gross will divulge the secrets of matching cheese with wine, beer or cider. He will also tell you how to prepare the perfect cheese board sharing what to put on it and, more importantly, what not to put on it. You will enjoy tastings of some of the regions best cheese as Peter shares his knowledge in this masterclass.

Chardonnay and Pinot: A Shaw + Smith Masterclass – 2.30pm $30

Join Shaw + Smith’s senior winemaker, Adam Wadewitz, for a relaxed, yet informative, tasting of the three most exciting grape varieties in Australia today.  Enjoy award-winning examples from Shaw + Smith’s Adelaide Hills vineyards and the stunning Tolpuddle Vineyard in Tasmania while you get to grips with why these varieties suit Australia’s cooler climate regions so perfectly. Some tasty salty bites featuring Olsson’s Salts will help illustrate how just a dash of savoury can elevate the sweet to even greater heights.

Yarra Valley & Rossini Caviar Masterclass – 1.30pm $20

Nicholas Gorman and Natalie Traversa will be showcasing and celebrating Yarra Valley Caviar Salmon and Trout caviar and the world-renowned Rossini Sturgeon (Baerii, White & Oscietra). Nicholas and Natalie will explain where and how Yarra Valley Caviar is sustainably raised and ethically hand-milked and how Rossini Caviar is sustainably sourced and how to taste it. In this Masterclass you will experience a vertical tasting of five styles of caviar with sparkling wines. Nicholas and Natalie will showcase some great ways of using caviar so you can understand why the best chefs in world love these products. Kirsten Tibballs Dessert Delights Masterclass – 4.30pm $20

Kirsten Tibballs, Australia’s ‘Queen of Chocolate’ will whip up some dessert magic in the masterclass yurt.

Happy Hour – Brookies Salty Gin Sour Masterclass – 5.30pm $20

Join this masterclass for a sneaky gin cocktail.  The guys at Brookies Gin will be working their magic and spilling their secrets as they create a Brookies Salty Gin Sour – three classic ingredients balanced to perfection with the addition of sea salt.
