Crisso comes from Marton, a small town near Wanganui, two hours north of Wellington. He began cooking at the age of 23, and worked in a café called the George Street Deli in Palmerston North.

Following that, he went from Scott’s Restaurant in Mayfair to Pharmacy in Notting Hill before joining The Providores Restaurant and Tapa Room on Marylebone High Street in London in 2003, where he became Head Chef in 2009. There he became highly influenced by co-owner/executive chef Peter Gordon.

In 2009, he took over the Head Chef’s position from Miles Kirby, who set up Caravan in Exmouth Market, London. Having been away from home for fifteen years, he comes back to New Zealand and delights in using the island’s bounty – fish, oysters, olive oil, and the lovely wines at Oyster Inn. He has put his own personal stamp on the food with a simple menu, befitting the surroundings, yet with some quite quirky dishes like a tender octopus salad with barley and herbs, or crunchy crumbed fingers of lamb belly with mint vinaigrette that makes for interesting eating.
