Exclusive Il Palagio Wine Dinner at The Manor

The St. Regis Macao invited wine connoisseurs to an exclusive dinner on March 2, 2018 to sample premium wines from the acclaimed Tuscan Villa Il Palagio Estate.

The dinner celebrated the partnership between The St. Regis Macao and the wine estate owned by musical legend Sting and his Hollywood producer wife Trudie Styler. The St. Regis Macao is expanding its already impressive wine collection to offer guests wines from the award-winning Il Palagio Estate.

To mark the occasion, The Manor’s culinary team crafted an innovative yet elegant five-course menu to complement Villa Il Palagio Estate’s premium wines. Exceptional ingredients including Bottarga, Red Carabinero Prawns, and Sicilian Tuna Belly were showcased in an enticing array of Pan-European dishes.

Guests at the event sampled five exquisite wines from the estate, including Casino Delle Vie 2015, the estate’s more traditional blend of Sangiovese, Canaiolo and Colorino. Expertly paired with The Manor’s Grilled Rangers Valley Black Market Short Rib or Mandagery Creek Venison Fillet, the fine tannins offered the perfect pairing to the flavours of the main dishes. Another popular blend, Sister Moon 2013, named after one of Sting’s popular songs, features mellow tannins, and was paired with dessert for a poetic finish.

Il Palagio Estate is perched on the winding hills of picturesque Tuscany, Italy. Once owned by the prominent Martelli family, the estate was borne out of Trudie and Sting’s pursuit for a peaceful sanctuary and passion for wine. To realise their vision, the couple retained the entire group of original farmers and commissioned an extensive seven-year renovation. In less than two decades, the artistic duo has revolutionised the once rundown property into a thriving vineyard. Using organic and biodynamic farming methods to nurture the grapes, their commitment was recognised when their super Tuscan blend Sister Moon was named one of “Italy’s finest 100 Wines” by OperaWine, a prestigious accolade for Italian wines.

Wines from Villa Il Palagio are permanently available at The St. Regis Macao. The selection includes Message in Bottle 2015, a contemporary blend that highlights a smooth finish with dark fruits and cherries; Casino Delle Vie 2015, a blend that pays homage to traditional wines and elevates the finish with chocolate and violet sweets; and When We Dance Red 2016, a chianti made primarily of Sangiovese to create a smooth and balanced palate.
