Executive Chef Sakal Is Appointed To Be President Of “Les Disciples D’escoffier” Vietnam

Ho Chi Minh City, Sofitel Saigon Plaza’s  Executive Chef- Sakal Phoeung has been appointed to be the President of Les Disciples d’Escoffier effective from April 2014.

imgSakal received the transmission from Chef Didier Corlou, one of the most famous Frech chef in Vietnam in the Escoffier gala dinner on 28 March 2014. His responsibilities include promoting French cuisine nationally as well as seeking out and developing young Vietnamese talent. This is a major honour for both Chef Sakal and Sofitel Saigon Plaza.

Started in Nice, France in 1954, Escoffier International has grown to become one of the worldwide brand ambassadors of French cuisine. Today, there are more than 25,000 disciples working at the most prestigious hotels, resorts and restaurants around the globe: France, China, Hungary, United States, Italy, Germany, Spain, Japan, Benelux, Canda, Portugal, Thailand, Russia…etc.  With such a large organization, Escoffier International is now creating branches in each country they operate.

Chef Sakal will be the representative of Escoffier in Vietnam to keep the ” Spirit of Escoffier”  which is:

  • Equality and Appearance : the Disciples have no difference of rank, their enthronement is identical
  • Knowledge and Transmission : the Disciples will share and transmit their knowledge
  • Culture and Modernity : the Disciples respect the Culinary History and laud a perpetual evolution of Cooking and Gastronomy

Chef Sakal Phoeung, Sakal started his career in France and has more than 25 years of experience working in famous restaurants and hotels in Europe and Asia. With almost 20 years of experience at a number of fine restaurants and hotels in France, Vietnam, Cambodia and China, Chef Sakal now brings his award-winning culinary skills to Sofitel Saigon Plaza.

Having graduated from the Hotelier School of Challes-Les-Eaux and the world-renowned LeNotre School, Chef Sakal earned several years of kitchen experience as he held the positions of Commis Poissons, Commis-Garde Manager, Chef de Partie Poissons, Chef de Partie Patisserie, and Executive Sous Chef at several restaurants in France over a 9-year period.

Chef Sakal now brings his considerable experience and culinary expertise to Sofitel Saigon Plaza. He is pleased to be living in Saigon and he looks forward to welcoming guests to his restaurants to experience the only French five star hotel can offer, right here in Saigon
