Experiential Dining Puts Sofitel So On Every Epicurean’s Map

The Singapore dining scene is set for a shake-up with the opening of Xperience, the signature restaurant and bar from Sofitel So Singapore, located at the iconic 35 Robinson Road building.  Opening its doors on 31 May, Xperience will be a key focal point of the exciting new property in the heart of the CBD, and a destination for the Singapore cosmopolitan set.

unnamedWith a relaxed yet stylish gastro-bar dining concept, Xperience will take guests on a one-of-a-kind interactive culinary journey of the senses.  Centre-stage is a magnificent custom-built matt-black and rose-gold 20-ft Molteni oven, where Sofitel So’s resident chef, Ms. Anne-Cecile Degenne, will take the helm, along with her expert team.  Young, vibrant and dynamic, Chef Anne-Cecile Degenne is Sofitel So Singapore’s resident culinary designer, and Singapore’s first female hotel executive chef.  Degenne has worked with some of the world’s best chefs including Michel Bras and Jean Georges Vongerichten, and was recently hand-picked to participate in France’s competitive Top Chef Competition, where she was in the final six.

Xperience diners will be able to design their own customised menus, based on different culinary experiences – crunchy, juicy, smoky, creamy, silky, spicy and zesty – to name a few.  Ensuring a social environment and tapping into the increasing trend for family-style sharing, dishes will be available in three sizes: XS for tasting, XM for a personal size and XL for sharing.  At Xperience Restaurant the menu can be tailored to suit any mood, a sophisticated combination of international tastes and textures to surprise and delight. Must-try dishes include the foie gras & truffle siew mai, smoked salmon with vodka caviar, and Chipotle chilli crab tacos. Xperience Bar features an extensive cocktail list that mirrors the restaurant, allowing guests to choose drinks based on their mood or create something from scratch. 35 wines by the glass ensure that all occasions can be catered to on 35 Robinson Road, and a lively vibe with a range of Resident DJ’s promises to entice passers-by.

Reaching for the (Michelin) stars with HSBC

Xperience is also positioned to be a destination for global cuisine in the heart of Singapore, when Chef Anne-Cecile is joined by internationally acclaimed Guest Chefs on a regular basis.  Sofitel So Singapore has partnered with HSBC to bring Michelin-star degustation to celebrate the delicious and unique – an experience any true foodie should have!

HSBC cardholders will be able to redeem exclusive benefits at Sofitel So Singapore including a 10% discount at all F&B outlets, as well as priority bookings and 15% discount for HSBC Visa Infinite and Premier cardholders. During Celebrity Chef promotions, all HSBC cardholders will get 10% off the total bill and a complimentary bottle of wine worth $200 when they dine in a party of four. Delicious Collaborations

Selected from across the spectrum of established Michelin-starred chefs to emerging young talent, each Chef will bring their signature dishes and a taste of their home country to Singapore exclusively with Xperience, ensuring an ever-changing menu.  The entire ambience will transform to reflect the visiting style of cuisine, through lighting, sound and a complementary cocktail list at the bar.

Setting the bar high from 1 to 5 July Michelin-star Chef Yuichi Kamimura will showcase his culinary talent at Xperience, giving foodies in Singapore a chance to have a taste of his creative dishes. Chef Kamimura was a protégé of world-renowned Japanese chef Tetsuya Wakuda. He helms the kitchen at his eponymous 40-seat temple of haute-gastronomy tucked in the luxury ski resort of Niseko in Hokkaido. He is best known for his Japanese-French cuisine, artfully yet seamlessly fusing east and west, without compromise or confusion and sourcing only the best seasonal ingredients available locally.

Following Chef Kamimura will be Michelin-star Chef Tom Sellers (1 – 6 September), winner of the Young British Foodies awards, chef and owner of the famous restaurant Story. Chef Tom will help redefine the gastronomy at Xperience as he share his memories with his diners through what they see, smell and taste on the plate, at the same time showcasing the best seasonal British produce. He will be followed shortly thereafter by Michelin-star Chef Nicolas Isnard (27 October – 1 November) ofL’Auberge de La Charme in France. His cuisine is influenced by Mediterranean and Italian flavors and combines tradition and innovation, mixing distinctive rustic flavors with provincial produce in the presentation of classic French dishes.

Daring Design

Drawing inspiration from the vibrancy of Singapore, the interior design of Xperience is brave, bold and dynamic, catering to experience-seekers who are looking for more than just a dining experience. Xperience will offer decadently elegant ambience in comfortably relaxed surroundings.

An eclectic interior designed by Isabelle Miaja will feature ambient LED lighting and a plush “bed-table” positioned at the heart of the restaurant.  Guests will be able to climb in for dinner with a difference…bringing a whole new meaning to dining in bed.  Fresh and funky, the design will ensure a unique feel the moment guests enter through the doors.
