Felix, The Peninsula Hong Kong’s legendary 28th-floor restaurant and bar, has reaffirmed its reputation for culinary creativity and compelling cocktails with the launch of a vibrant new era driven by Chef de Cuisine Juan Gomez and Mixologist Marko Petrovic. As well as bringing guests the most innovative and exquisitely presented modern European epicurean delights, the duo are reinvigorating the Felix experience, establishing it once more as Hong Kong’s top-notch rendezvous for the city’s most discerning bon vivants. 

This fresh take on Felix is personified by the Long Table Cocktail Bar, which will become Petrovic’s “Stage of Cocktails”. Guests can enjoy a brand new selection of signature cocktails along with Chef Gomez’s tapas menu, while a DJ-curated soundtrack and stunning harbour views provide the perfect accompaniment to this “Sky High Soiree”. Guests are in safe hands with the charming and charismatic Petrovic, who has many years of experience at five-star hotels in Dubai and Qatar, and is a true master of the art of mixology. 

Drawing on close to 30 years of experience in the kitchen, including spells at a variety of award winning and Michelin-starred restaurants in Spain, the UK, Australia, the Maldives and Dubai, Chef Gomez brings a wealth of creativity and technical brilliance to the Felix kitchen. 

In creating the new Felix Experience Menu, Chef Gomez has combined elements of European cooking to create a range of exceptional dishes. The appetizer, for example, includes crunchy Parmesan lollipops and Red prawn ceviche toast. This is followed by a refreshing Avocado gazpacho, which guests can personalise to their taste with a range of condiments; and Quail in escabeche, in which the gamey flavours of the quail are balanced by pumpkin and orange segments.

For mains, those who enjoy dishes that are lighter on the palate can opt for the subtle flavours of the Seabass Provençal with black garlic aioli, while those who prefer bolder dishes will be tempted by the French-inspired dish Duck magret with Puy lentils, kumquat chutney, foie gras and coffee soup. 

Dessert is an interactive affair, as guests are presented with a piece of chocolate inspired by the Philippe Starck-designed feature wall at Felix namely “Break the Felix Wall”, which they then need to break open with a small wooden hammer to enjoy the contrasting textures of the Whisky chocolate ganache and Verbena sorbet hidden within. 

To enhance the new Felix Experience Menu, Petrovic has created a trio of cocktails that pair perfectly with three of the dishes. These include the Golden Hands, a blend of Havana 7 rum and coffee-infused Campari that complements the antipasti; the Kowloon Sour, a concoction of Plymouth Gin, Dubonnet, beetroot mix and pepper cordial that goes with the quail; and the Caballero, a mixture of Ocho Reposado tequila, Del Maguey Vida mezcal and chocolate bitters to accompany dessert. 

The 6-course Felix Experience Menu is priced at HK$1,228 per person; HK$1,728 per person pairing with three glasses of wine; and HK$1,948 per person pairing with six glasses of wine.
