Fine wines of Washington State feature at intriguing tasting and gourmet wine dinner

The Reflexions set out anew to engage the senses and inspire the mind as they present some of the most prized vintages among the much-praised Chateau Ste Michelle wines from one of the US’s premier wine-growing regions in a special one-night-only event on Saturday, 05 October 2013.

The ReflexionsElevated experiences and unexpected discoveries are assured as the wine dinner features four exceptional wines: Stimson Estates Cellars Chardonnay; Washington State Vineyards  2010; Stimson Estates Cellars, Cabernet Sauvignon, and; Washington State Vineyards 2011.

Meanwhile, The Reflexions remarkably talented Chef de Cuisine Daniel Bucher has been inspired to create a 5-course contemporary French dinner. Each dish teases the greatest depth from the wines while allowing the wines to reciprocate on finest authentic produce passionately composed into works of gastronomic art.

Daniel BucherChateau Ste. Michelle has the enviable distinction of being the founding winery of Washington State, USA, recognised today as one of the top New World wine-growing regions. The winery’s roots date back to the Repeal of Prohibition in 1933, while the award-winning Ste Michelle label was launched in 1967.

Today, the Chateau is defined by its keen focus on prime Washington fruit and melding of Old World winemaking tradition with New World innovation, and is best known for its award-winning Riesling, Chardonnay, Merlot and Cabernet Sauvignon.

The vineyard nestles Columbia Valley where the shielding Cascade Mountains limit rainfall to 6-8 inches, enabling the vineyard managers to closely control vine vigour through irrigation. During summer, daytime temperatures hover in the mid-80’s under sunny skies; cool night-time temperatures in the fall protect the grapes’ natural acidity and provide perfect conditions for ripening. The resulting grapes develop intense aromas and flavours and create the distinctive sensibilities of Ste. Michelle wines.

Meanwhile, state-of-the-art technology is embraced to ensure consistent top quality, with the winery being one of the few to operate separate wineries for whites and reds.

Daniel Bucher’s exceptionally indulgent menu accentuates the wines every step of the way. The culinary voyage begins with two entrees. The first presents rare French razor clams as the main ingredient. The clams are especially difficult to harvest because of the speed with which they hide themselves in sand at the edge of the Atlantic Ocean. Here the darling delicacies are subtly enhanced with fennel, celery and a pinch of curry – all perfect for savouring with Château St. Michelle Chardonnay, Columbia Valley, 2009.

The second entrée takes Japanese Hokkaido scallops as the main ingredient. These are grilled and served on a bed of leeks and Brussels sprouts with raisins added for sweetness. The rich and flavourful dish promises to impart new culinary revelations mated with Chateau St. Michelle Sauvignon Blanc, Columbia Valley, 2011.

Followed by wild French chicken breast braised in butter sauce, giving rise to exquisitely delicate poultry aromas. Nutty, al dente Quinoa seeds, tasting not unlike carrot without the sweetness and with more of a peppery punch, enhance the dish alongside the creamy, earthy sweetness of chestnuts. Chateau St. Michelle Merlot, Canoe Ridge Estate, Horse Heaven Hill 2010 raises the shared experience to the level of the sublime.

The main dish offers grilled rack of New Zealand lamb where the sweetbreads are used to enrich the flavour which is juxtaposed with potato gratin finished off with creamy Roquefort cheese. Here  Chateau St. Michelle, Cabernet Sauvignon, Columbia Valley, 2010 combines irresistibly.

The gourmet repast concludes with Chocolate and Raspberry Pavlova, the meringue-based dessert with a crisp crust and a soft, light inside.
