Four Seasons Hotel Vancouver and YEW seafood + bar has expanded its cocktail and culinary partnership between award-winning local bartender Lauren Mote and Executive Chef Ned Bell with the launch of a tropical cocktail collection and Reverse Happy Hour at YEW.
In keeping with its flare for creativity, a sense of humour and a touch of rebelliousness, YEW seafood + bar invites guests to enjoy the Reverse Happy Hour towards the end of service from 8:00 to 11:00 pm, instead of during the traditional cocktail hour at the beginning of the evening.
During this time, Mote and Bell have teamed up to present tropical-inspired treats as an extension of the uniqueOceans cocktail program designed by Mote and launched by YEW earlier this year. Reverse Happy Hour features five new cocktails created by Mote named the Four Seasons Tropical Collection after the five locales they were inspired by – Seychelles, Bora Bora, Maui, Mexico City and Costa Rica.
Working with the cocktails’ flavour profiles, Chef Bell has created five tasting dishes perfect for pairing, such as crispy fried selva shrimp and black tea crusted albacore tuna. Mote’s Tropical Collection stays true to what YEW guests have come to expect from the luxury brand, offering innovative, thoughtful cocktails featuring top-shelf liquor and premium ingredients at an approachable price.
Reverse Happy Hour is available in YEW bar + lounge seven days a week from 8:00 to 11:00 pm, which is the only time guests will be able to enjoy the new menu. Cocktails and tasting plates start at CAD 16.
