A fashionably lavish oasis away from the hustle and bustle of the city, Maison Eight takes brunch lovers on a culinary journey with dishes that excite those with even the most discerning palates. Spoiling diners for choice, Executive Chef and General Manager Joe Chan’s new Parisian-inspired brunch menuserves a broad choice of Les entrées (light starters and egg dishes), Les plats (main courses) and Les desserts starting from HKD 138 for one-course including fresh coffee or tea. Diners can also add on free-flow Bollinger Champagne or AIX Rosé for an additional HKD $390.
Complementing the breath-taking views that surround Esmé and The Ballroom, brunch at Maison Eight is adecadent affair every Saturday, Sunday and public holidays from 11am to 3pm. Soak up the natural light that floods the space, and move to the beats in the air, providing an atmosphere that inspires creativity and conversation.
Chef Joe describes the new brunch menu as a culinary performance with up to four acts, “Entrées that introduce our cuisine and arouse your interest for the following plats as the main show, rounding up with a sweet dessert finish on point with the potential to add an encore performance in the form of a sharing platter.” Freshly brought to the table, diners can choose up to a three-course menu for HKD 288.
The first act opens with a choice of Les entrée, a selection of Yoghurt with Granola Cereal or a Kohlrabi and Fennel Salad decked with Parmesan and apple is on the table. Or opt for a heartier Seared Scallops with salmon roe.Maison Eight is ready to satisfy any egg craving. Can’t decide? Choose from Chef’s Egg White Frittata with avocado, tomato and Gruyere cheese; Fried eggs with bacon, sausage, tomato, mushrooms and potatoes; or the Eggs Benedict with bacon.
For the second act, diners can indulge in a vast array of fresh and colourful flavours of the season, including Feuillettes with green asparagus and an orange Maltaise sauce, or a Prime Beef Burger filled with tomato, rocket, gherkin and cheese, paired with hand cut chips. Other Les platsare Roasted Chicken Breast, Pan Roasted Pork Chop or Grilled Scottish Salmon with sumac, lime and green vegetables as a side.
As the perfect finale, end on a sweet note with the choice of two Les desserts, such as a classic French gluten-free Orange Almond Gâteau,crispy Eton mess-crispy Meringue. or a timeless Double-Chocolate Brownie paired with vanilla bean ice cream and red berry salad or a cold treat of a scoop of sorbet or frozen yoghurt or ice cream.
As an “Encore”, Chef Joe recommends adding the signature Maison Eight Platter with Polynesian tuna, San Daniele ham & Burratina, Venison carpaccio, Japanese spot prawn, red shrimp, crab leg, mussels, whelk & vongole for sharing at the table for HKD 398 for 2 people or HKD 788 for 4 people.
