With some of the best seafood in Australia found in the Northern Territory, Hilton Darwinis looking to its own waters to provide guests with the freshest catch across all of its menus. In collaboration with Support NT Caught, aninitiative that promotes Northern Territory seafood established by the Northern Territory Seafood Council, Hilton Darwin is leading the waywhen it comes to endorsing fresh, local and sustainable seafood.
From baby snapper, black jewfish, baby rock cod and barramundi to mud crabs and banana prawns, the Northern Territory offers some of thecountry’s best seafood. In an effort to showcase this incredible produce, Hilton Darwin Executive Chef Akash Srivastava has introduced a Northern Territory seafood display in the hotel’s Mitchell’s Grill where guests are able to select their catch and have it cooked to their liking.

Chilli mud crab is just one of Srivastava’s specialties at Mitchell’s Grill. Having trained in India before moving on to work at various hotel’sin Dubai and Oman, Srivastava’s food reflects his Far Eastern heritage while incorporating lighter Southeast Asian flavours, that are typical ofDarwin’s food culture.
