Located on the second level of Gowings Bar & Grill at QT Sydney, GILT LOUNGE’s moody interior and bespoke furniture sets the perfect backdrop to the diversity of the bar’s new hand-crafted cocktail menu.

Calling upon an extensive cellar of liquor capable of inducing a green eyed hue in the most savvy of mixologists, QT Sydney’s finest bartenders have fashioned a list of fine cocktails made in Perlinii shakers, poured from antique soda siphons and served in vintage crystal.  The new menu showcases a twist on beloved classics, vintage tipples and daring signature concoctions.

With a passionate and skilled team at the helm, the newly crafted GILT LOUNGE cocktail menu is a study in innovation and imagination; reinstating why they continue to be recognised as some of the finest in the biz.

Included in-the-mix are three new signature concoctions; Weis Daquiri, The Gilligan, and an aptly titled dropThe Natural Hipster’; each delightful creation demonstrating careful composition and nuanced ingredient layering with a perfectly balanced injection of visual theatre and presentation flair.

The grand Diva cocktail on the list is the Weis Daiquiri. Demonstrating a decidedly nutty base, and contrasted nicely with the fusion of Weis’ mango sorbet. Should Dame Edna Everage ever conjure a signature desert drink, we believe it would be something akin to this.

Don’t make the mistake of dismissing The Gilligan as a crowd pleasing tutti frutti fit only for the chorus line.  GILT LOUNGE’s reinvention of the classic rum punch serves well-off the ‘too sweet’ path thanks to a backbone stiffening blend of ABSOLUT ELYX vodka infused with pineapple, El Dorado Spiced Rum and Pernod Absinth.  Served in a copper pineapple with pellets of dry ice and smoke, it’s a stellar choice for punters that prefer their drinking experiences theatrical.

The Natural Hipster features a heady combination of vitality inducing ingredients to pack a truly herbaceous punch; spirulina.  Moonlighting as a healthy take on the classic Margarita, this blend of spirulina, aloe vera juice and Earl Grey infused with Cazadores Blanco Tequila result in a cocktail with an uplifting fresh palette and zest. Garnished with a sprig of Parsley this is one even the most ardent of fitness junkee would be happy to imbibe, relatively guilt free.

For those preferring to imbibe a grapier drop, GILT LOUNGE’S artfully curated wine list features limited release wine from the finest Australian and international cellar doors selected by industry stalwart Ian Cook, while the bar food takes a sophisticated turn under the guidance of QT Hotels Creative Food Director, renowned restaurateur Robert Marchetti.

The relaxed sophistication of the 60-seat cocktail bar on level 2 of the historic Gowings building is both refined and intimate. The vivid interior, by acclaimed designer Nic Graham, uses bespoke furniture and digital art by Daniel Boyd to deliver a distinctive, retro-futuristic ambience. Unique glimpses of the city are visible through the windows as music infuses, rather than dominates, the space for a laidback, loungey vibe.

Open until 2am Wednesday to Saturday, GILT LOUNGE brings decadence minus pretention to Sydney’s late night party scene.
