It’s always gin o’clock at The Optimist with Spanish style gin & tonics and gin cocktails. Inspired by the gintonería (gin and tonic) craze in Spain, vivacious bar manager Isabella Vannoni’s refreshing gin concoctions are perfect for winding into the hot summer months.
“In Spain, the bartender doesn’t ask you what you want to drink – he asks you how you want your gin and tonic prepared. Considered the national drink of Spain, the trend began in the north of Spain, where when you walk into a bar you are presented with a whole row of gin options and garnishes to create your very own favourite,” says Isabella.
The Optimist bar boasts 24 carefully selected speciality gins from around the world. Gin fanatics won’t be disappointed with the premium variety ranging from the Spanish Gin Mare with Mediterranean flavours and notes of olive, thyme and basil, to the Monkey 47, infused with 47 different botanicals blended to create a complex and robust gin.
The Optimist – Jensen’s Gin & Tonic
Drink like a Spaniard with generous chilled goblets of gin and tonic, garnished with pairings of fresh fruit and herbs chosen to complement each gin blend. Fruity and refreshing choices including the Aviation (HKD110), a neutral and floral American gin served with Fever-Tree Mediterranean tonic and fresh strawberries and the Plymouth Gin (HKD120), a smooth, clear, citrusy gin served with Fever-tree, lemon and blackberries.Jensen’s London gin (HKD120) is aromatic and herbal and is served with woody rosemary and lemon zest. For those looking for some spice, theEden Mill (HKD90) is a refreshing and botanical Scottish gin, accented with a kick of fresh chili. Made using juniper berries, the peppery Death’s Door (HKD110) is balanced with 1724 tonic, apple slices and oranges.

Handcrafted cocktails with a gin base include Isabella’s signature drinks, the Martinica (HKD110), a splash of Martin Millers gin with Aperol, fresh basil, lemon, vanilla and apple juice and the French Kiss (HKD100), a mix of Eden Love Gin, blackberry marmalade, lychee juice and lemon juice. Other must-try cocktails include the Bramble (HKD80), a combination of Bombay gin, sugar, lemon juice, blackberry liquor and the Gin on Ginger (HKD90), with Bombay gin, muddled fresh ginger, sugar, mint and topped with ginger beer.
