Acclaimed Cocktail Lounge & Whisky Bar Eau-de-Vie Melbourne are hosting an exclusive five-course degustation dinner on September 20th, giving 16 special guests the opportunity to taste a few of the rarest Single Malt Scotch Whiskies in the world.

The unique drams being showcased, which are aged up to 46 years and are worth $57,000, form The Balvenie DCS Compendium Chapter One. This collection isthe first series of five single cask whiskies to be released after being created by iconic The Balvenie Malt Master, David Stewart, to celebrate his five decades of experience at the independent family-owned Scottish distillery William Grant & Sons.

Eau-De-Vie’s Head Chef, Paul Bertheau, has created a tantalising five-course degustation dinner inspired by not only the whiskies themselves, but by the actual distillery in which they were created.

The exquisite menu starts off with an Amuse Bouche of Sautéed marron, white bean veloute, spring onion, Jamon Iberico bellota and cockle foam, before the courses commence.

Guests will be treated to five incredible courses including:

  • Ricotta and pumpkin filled squid ink tortellini, brown butter, grana padano, young shoots, and black truffle
  • Lobster two ways, vintage carrots, grey mullet roe, and black olive oil
  • Stuffed squab with veal sweat bread, pearl barley and morel risotto, foie gras, and pain d’epice
  • Truffled Brie, whisky carrot marmalade, fig, olive and rosemary bread
  • “Mont Blanc”, lemon jelly, candied chestnuts, whisky chestnut ice cream, with white chocolate tuile

Guests will be guided through their gastronomic journey by The Balvenie Brand Ambassador Ross Blainey and Geoff Fewell, Head of Whisky at Eau-de-Vie. They will also receive a personalised invitation, a copy of the menu, a copy of the original DCS Compendium book signed by David Stewart and a one of a kind Scottish Glencairn crystal glass. Tickets are $1,500 per guest.
