Brief Overview

Luke Stack is the Founder and Owner of Crumble Top, a brand new dessert venture in Sydney. Crumble Top is a dessert parlour that features an innovative new concept where everyone is able to design their own Crumble which is then made and baked to order. Crumble Top is located on King Street in Newtown Sydney, in a busy restaurant precinct. Crumble Top opened its doors in May 2016.

Luke is an experienced chef who has worked in professional kitchens across the world including Paris, Sardinia, Dubai and most recently under Gordon Ramsey in London for two years as his Sous Chef.

The flavours behind Crumble Top are all based on seasonal fruits, berries and the freshest of ingredients. Each Crumble is unique to its designer – from the filling, to the crumble topping and finally the ice cream and custard to the side.

The Crumble Top Concept

Luke developed the concept that grew into Crumble Top after buying some fresh rhubarb from his local farmers market and making a delicious Crumble. Luke then invested two years to prepare everything needed to open his first concept store. This included developing ingredient options through to developing the unique packaging. Every Crumble is individually baked in its own dish and then served in a unique tray system along with side servings.

The Crumble Top ordering process involves three easy steps. 1. Select the filling. 2. Choose the topping. 3. Pick the sides, ie, ice cream, sauce, custard. Crumble Top offers an extensive range of offerings across all three steps. In addition, the menu options also change based on seasonal availability and ongoing ‘speciality creations’ by Luke.

Crumble Top has partnered with Uber Eats and Deliveroo to deliver freshly baked Crumbles direct to customers’ homes. This has proved itself a great opportunity, with sales increasing heavily, some days solely focused on deliveries rather than in-store customers.

The opportunities for expansion are limitless, with Mr Stack already receiving attention from potential investors interested in franchising Crumble Top across Sydney and other states.
