Hilton Sukhumvit Bangkok Announces New Italian Chef and Outlet Manager

Hilton Sukhumvit Bangkok today announced the appointments of its new Executive Sous Chef and Outlet Manager for Scalini and Mondo restaurants.

Hailing from Milan, Italy, Chef Egidio Latorraca has worked in key positions in luxury restaurants and renowned hotels in places such as Australia, Europe, Macau, Vietnam, and Indonesia.  The tri-lingual chef brings over 11 years of experience in Italian cuisine to fine dining establishments all over the world.  He began his career as Chef de Partie and Chef Collaborator at Fodele Beach Hotel in Crete, Greece.  His most recent post was Junior Executive Sous Chef at Intercontinental Bali Resort, where he led a team of 18 kitchen staff and managed culinary activities for two restaurants.  Egidio is a Certified Master Chef of Italian Cuisine by Academia Barilla.  At Sofitel Legend Metropole Hanoi, he led the culinary team of the Angelina, an award-winning restaurant recognized as one of the “Great Hotel Restaurants in 2010” by HOTELS magazine.

Recently appointed as Executive Sous Chef at Hilton Sukhumvit Bangkok, Egidio will oversee Scalini and Mondo while leading a team of 15 kitchen staff to bring the Italian soul into both kitchen and restaurant.  At Scalini, Egidio will explore and modernize 1920’s Italian-American cuisine by uncovering American methods of Italian cooking.  For Mondo, he ventures into a familiar specialty in the Mediterranean and antipasto cuisine found in salumeria shops, commonly found on Italy’s street corners.  The “East Meets West” concept will showcasecharcuterie meat and formaggi cheese towers.

Originally from Italy, Roberto Visaggio has been operating restaurants for 30 years. At age 22 he took over his family business, Enoteca Visaggio (one of the top 20 wine bars in Italy since 1938).

In 2010, he relocated to Pattaya, Thailand to work as Restaurant Manager for Toscana Restaurant. During his time there, Roberto designed menus, trained staff, and ran the restaurant’s daily operations.  After Pattaya, Roberto moved to Bangkok to run Zanotti, an Italian franchise with outlets in Bangkok and Khao Yai. After two years there, he joined the Hilton family.

Roberto was recently appointed as the Outlet Manager at Hilton Sukhumvit Bangkok, where he is primarily responsible for Mondo and Scalini.  His entertaining and energetic personality invites guests to interact with a friendly sommelier.  Roberto’s career aspiration is to grow with the Hilton brand and travel to other destinations such as Australia, New Zealand and Japan.
