Hilton Sydney Unveils $1.5 Million Glass Brasserie Refurbishment

Hilton Sydney has unveiled an impressive $1.5 million kitchen refurbishment of Luke Mangan’s hatted restaurant glass brasserie.

Designed by The Rohrig Group and A+ Design Group, the refurbishments have created an open kitchen and chef’s table with an evocative and layered interior, featuring highly figured dark granite juxtaposed against pristine white porcelain slabs. In addition, the extensive commercial cooking equipment was custom built to suit the restaurant’s specific requirements.

Operating for both buffet and A la carte dining, the refurbished open plan design provides patrons with sweeping views of the state of the art kitchen, creating a unique atmosphere and heightened experience for diners.

Luke Mangan says, “the kitchen is the heart and soul of a restaurant. We wanted to ensure that we stayed true to the glass that our customers know and love, whilst also evolving the offering to reflect the changing dynamic of fine dining. It was essential that the kitchen lived up to the expectations of the modern diner, which it certainly does.”

To further enhance the dining experience, Luke has also created eight new dishes and six desserts, specifically designed for the glass autumn menu. Continuing to utilise the best of fresh seasonal and sustainable produce, new menu highlights include, mozzarella nodini – a creamy and textured dish impeccably presented with smoked heirloom tomato, olive, almond, basil, crouton; Moreton bay bugs served with black garlic, chilli, lime, witlof -the perfect seafood dish to be enjoyed in temperate weather and for dessert, an ever so light pumpkin soufflĂ© with buttermilk sorbet, highlighting the seasonal ingredient for March.
