Chef Alan Marchetti and the 208 team follow the exact guidelines of the Association Verace Pizza Napoletana, preparing from scratch using the freshest ingredients. Chef Alan says, “Pizza is meant to be enjoyed and shared between family and friends. It’s a dish that puts a smile on anyone’s face.”
The dough is special Italian flour with a high protein content that is kneaded by hand to no more than 3mm thick and an elevated outer edge. The sauce is made using only Italian tomatoes, usually San Marzano, that grow on the volcanic plains to the south of Mount Vesuvius. Ingredients used for the toppings are imported, including Buffalo Mozzarella made with milk of water buffalos from the Campana region. The pizza is baked in a custom-designed pizza oven shipped in from Naples, using quality stone bricks, baked for 60 to 90 seconds at 485 degrees Celsius. The outer crusts turn a beautiful golden colour and taste fresh and flavourful.
Pizzas at 208 Duecento Otto are best enjoyed when slices are folded in half and devoured.
