The new Hotel Indigo Bali Seminyak Beach opened in July 2017 on Seminyak’s famous Mesari Beach, is introducing a selection of dining and drinking destinations perfect for weekend gatherings with friends and family, from beachfront cocktails to modern twists on traditional Balinese cuisine.

Hotel Indigo Bali Seminyak Beach draws inspiration from the flavours, culture and character of its surrounding local neighbourhood, the vibrant and lively Seminyak district, and promises an authentic fusion of enchanting Balinese culture and contemporary creativity.

Extending across 4.7 hectares of lush landscaped grounds, the stylish and relaxed resort fronts Mesari Beach (also known as Double Six Beach) along the southern stretch of Seminyak. Here, the Hotel Indigo Bali Seminyak Beach is adding to the fashionable dining and nightlife venues close by, with its own mix of dynamic restaurants, cafes and bars.

Makase, the hotel’s neighbourhood café, inspired by Balinese street food and the island’s daily markets. It’s contemporary yet casual with an open kitchen serving colourful seasonal flavours for breakfast and dinner, and promotes organic farming, animal welfare and sustainability of land, sea and wildlife. Designed to share, encouraging a convivial dining experience, dishes include BBQ Glazed Pork Ribs, Nasi Goreng, Es Teler, Crispy Grain Quinoa Salad; Balinese Skewers selection, Soy curried butterfish; Seafood Opor; and Terang Bulan (the famous street food sweets of Deep-fried Pancake topped with Chocolate and Condensed Milk)

Pottery Café is open all day with a finely curated collection of local specialty coffees, teas and chocolate alongside freshly made pastries, charcuterie, artisan breads, pies, fruits and more. It’s the perfect spot to relax with friends and watch the world go by accompanied with wide selections of coffee, tea and chocolate that is 100% cultivated in Indonesia archipelago. Pottery Café also offers the authentic café experience as the first hotel’s coffee shop in Indonesia to have its own coffee roasting machine that is designed in Japan and assembled in Java, Indonesia. Other than the drinking experience, Pottery Café also offers a great shopping experience through the retail display of ceramic ware produced by a local partner from Bali, Kevala Pottery.

Organic artisan bar by day and speakeasy cocktail bar by night, the Tree Bar offers both healthy and bespoke refreshments within a gorgeously verdant space bursting with foliage. Created by the resort’s Balixologist™ (hand crafting mixed drinks using locally grown herbs, spices, greens and tropical fruits and inspired by Balinese heritage) the drinks menu features temptations such as Laklak Swizzle with Bacardi rum-infused pandan, Arak spice liqueur, pineapple juice, coconut nectar, lime juice and soda water; and Kopi Sik Luh – a twist on the famous Espresso Martini – with Absolut vodka, Pottery Cafe cold brew espresso, white chocolate liqueur, turmeric and vanilla syrup, chocolate bitters and milk foam. There are also plenty of fresh juices and non-alcoholic cocktails, as well as healthy soups and salads.

By the resort’s main pool is the Cave Pool Lounge, which serves cool and healthy tropical drinks as well as cocktails and craft beers, alongside tasty light bites. For sweet lovers, Cave Pool Lounge offers the only hotel in Bali to have its own home-made rolled ice cream with a base created using fresh local vanilla bean pods and infused with coconut, to be layered with toppings as chosen by patrons looking to cool down in between dips in the pool.

Salon Bali, set to open in end of 2017, is the signature dining restaurant of Hotel Indigo Bali Seminyak Beach, an intimate space with a rustic design aesthetic where refined Balinese cuisine featuring the island’s traditional delicacy – babi guling, or suckling pig – is served as part of an 8- or 12-course menu of modern and exotic Balinese dishes. Expect to delight in tastes such as Shaved Beef Rendang; Ayam, farm egg and lobster; and Crispy kempul, baby octopus, white pear, mint and basil.

Also scheduled to open in end of 2017 is SugarSand Beach Club. Located by the pristine white sand beach, the beach club offers a space for more than 400 guests and visitors. In what is set to become Seminyak’s hottest new beachfront bar and restaurant, the artisan-crafted architecture and interiors inspired by the modern interpretation of Balinese fishing culture. It is an all-day oasis, serving delicious robatayaki (Japanese-style charcoal grilled dishes) and refreshing cool drinks. When the sun sets over the ocean, the venue comes to life as the resident DJ sets the music while the resort’s dedicated Balixologist™ crafts the – traditional Balinese liquor – Arak-infused cocktails.

All under the direct guidance of Hotel Indigo’s Executive Chef Mads Wolff, there are six lifestyle dining offerings at the new resort, with a destination to suit any time or temptation of the day or night. Mads is dedicated to using only the freshest locally sourced ingredients and much of his produce – including the fruits, vegetables, herbs, outstanding coffee, local Arak liquor, premium craft beers, chocolate and even the cheeses used in his menus – are grown or made in Bali and Indonesia.
