IconPark Welcomes People’s Choice Award Winners “Rupert & Ruby” By Invitation For Season Two

IconPark has today announced Rupert & Ruby, a fusion team from Season One, will be taking up residence at their Season Two Stanley St location.

Headed up by Eli Challenger and Aaron Pearce from one of Bondi’s favourite establishments and IconPark contestants Ruby’s BBQ, the new dining space will open their doors on August 25, combining the best of both concepts.

A platform for top hospitality operators to launch their unique bar and dining concepts, IconPark was conceptualised to unearth and catapult talent into the marketplace. With such a strong field of finalists from Season One, IconPark identified that numerous teams were of an exceptionally high standard and as such have taken the opportunity to extend a curatorial invitation to the team that made up “Ruby’s BBQ”. Rupert & Ruby will deliver the Sydney dining scene an invigorated concept that builds on the teams best work from Bondi coupled with the flavors of Ruby’s BBQ.

“The Ruby’s BBQ concept was so popular at the Taste of Sydney festival, we just had to give these talented and passionate people an opportunity. They will bring a new dimension to the Stanley St location”, says Dean McEvoy, IconPark Co-Founder.

Canadian born Executive Chef Eli Challenger has learned different styles and techniques from the best of them including Sydney’s Porteno. Challenger focuses on the essence of a dish, seasonality of his produce, and hearty satisfying food. The winner of the coveted 2014 People’s Choice Award at Taste of Sydney and the most successful dish of IconPark at the festival, the team of Rupert & Ruby will champion a meeting of two culinary cultures, modern Australian and traditional American.

“Eli is such an exciting young culinary talent, the festival goers at Taste of Sydney recognised the passion he and his team put into their work. IconPark trusts in the ‘crowd’ of diners in cities to identify brilliant talent”, Paul Schell, IconPark Co-Founder, states.

The Rupert & Ruby team will bring an all day eatery. For your coffee, they are collaborating with fellow Bondi boys Will & Co; you’ll find modern twists on traditional versions of egg dishes, fried chicken and waffles, and flavours of the Pacific Northwest. New comers to the team’s menu include an array of moorish burgers, such as the Big Poppa, a full sized take on Fat Rupert’s award winning Yeezy Sliders, the Notorious K.F.C and the Bondi Babe. Challenger’s signature approach to vegetables and salad’s showcases the effortless simplicity with which he can reinterpret humble greens to Sydney siders.

Rupert & Ruby will reside at IconPark’s Stanley St location until the end of 2014, as new IconPark crowd-funding locations are launched around the city. After the overwhelming response from the public, IconPark is busy fielding offers from various commercial property owners for new venues for Season Three. The innovative platform will soon be set to feature multiple locations in the market during any one season.

Season One’s Stanley St Merchants will finish their residency on Saturday August 9, with Matt Stone, Bobby Carey & Jeremy Spencer taking on new opportunities after winning over Sydney diners with their fantastic seasonally responsible dining concept. The highly successful St Ali coffee operations will continue until Rupert & Ruby is revealed to the public on August 25.
