InterContinental Kuala Lumpur Appoints New Chef To Offer Rediscovery of Authentic Regional Malay Dining with “A Taste of Perak and Penang”

InterContinental Kuala Lumpur’s esteemed Serena Brasserie is celebrating the appointment of the restaurant’s new Chef de Cuisine Mohd Zalizam with an authentic Malay menu celebrating the culinary traditions of his native region – ‘A Taste of Perak and Penang’, featuring over 30 signature dishes available between 15th October and 15th November 2013. 

Malaysian dining menu: InterContinental Kuala Lumpur's Serena Brasserie is honouring authentic Malay cooking with the launch of the new Chef de Cuisine's "A Taste of Perak and Penang" menu. Born and bred in the state of Perak and a master of Malay cuisine, Chef Zam joins the accomplished culinary creatives at InterContinental Kuala Lumpur following an illustrious cooking career at some of the city’s top hotels including the Shangri-Las and the Sheraton.

Chef Zam said that he was thrilled to be joining the gastronomic team at InterContinental and relished the opportunity to show off traditional Malay dishes that he holds dear to his heart.

“Growing up I learned a lot of Perak kitchen fundamentals and time-honoured recipes through my relatives, especially my grandmother,” said Chef Zam. “A lot of my Perak style dishes are still heavily based on those closely guarded family recipes, while my Penang dishes have a little more Indian Muslim or mamak influence which I picked up from my mentor , he said.

Culture of cuisine: InterContinental Kuala Lumpur enjoys a prestigious location just off Jalan Ampang. “The aim of ‘A Taste of Perak and Penang’ is to recreate and celebrate these different styles of Malaysian cooking on one menu within the refined surroundings of Serena Brasserie,” he added.

InterContinental Kuala Lumpur General Manager Phil Riley said he was delighted to offer guests the opportunity to discover a true taste of Malay cuisine in a refined, luxury setting.

“This is just the sort of sophisticated and memorable dining experience one would expect from InterContinental,” Mr Riley said. “Transporting local specialities and authentic experiences into an elegant environment is something that we take particular pride in, and Chef Zam’s new menu does just that.”

The ‘Taste of Perak and Penang’ menu will feature some of the region’s most famous food with recommended dishes such as Daging Mazak Hitam, Kari Kepala Ikan, Sotong Masak Kunyit, and Passembor taking centre stage to represent the state of Penang and all time favourites like Ikan Bakar, Laksa Kuala Kangsar, Nasi Ulam, Ayam Kampong Rendang and Rendang Tok showcasing the very best of Perak dining.

There will be a lunch menu served from midday until 2:30pm and an evening dinner menu served between 7pm and 10:30pm.
