InterContinental Sydney is proud to announce the launch of a limited-edition cocktail, The Treasury Martinez, created to celebrate the 170th anniversary of The Treasury Building in which the hotel stands today.InterContinental Sydney has a rich heritage, dating back to 1849 when construction commenced on the Treasury Building, the first purpose-built government office in Sydney. Today, the distinctive sandstone building is home to Sydney’s most iconic hotel, and also possesses the oldest working lift in the Southern Hemisphere and Australia’s first vault, which remains untouched.

To mark this milestone, Max Babajev, The Cortile Bar & Lounge Manager at InterContinental Sydney, has crafted a cocktail that embodies the history, refined beauty and prestige of The Treasury Building. The cocktail is based on a classic Martinez, invented in 1849 as the forefather to the modern-day Martini, transformed with modern garnishes.

On the creation of the Treasury Martinez, Babajev says, “This cocktail pays respect to the hotel’s rich heritage and the Treasury Building’s 170-year milestone, whilst celebrating the present day as we look to a new decade. My aim is to leave guests with a memory lasting long after their final sip.”

The Treasury Martinez combines Four Pillars gin and Angostura bitters with original Antica Formula sweet vermouth and Luxardo Maraschino liqueur, balanced with a dash of absinthe. The addition of a chiselled ice cube dressed in 24k gold flakes develops the cocktail into a contemporary, explorative beverage.

The drink is served with an exquisite finishing touch – a delicate side dish of sweet gold-dusted pearls of lychee ‘caviar’, designed to be enjoyed with each sip. Each pearl has been crafted meticulously by hand with a method that blends cooking with mixology. The addition of the ‘caviar’, with its popping sensation and interesting texture, transforms the entire drinking experience and flavour profile of the cocktail.

The Treasury Martinez can be experienced in The Cortile for $29. Located at the heart of the hotel, The Cortile is a luxurious sun-lit bar and lounge where guests can bask in the magnificent ambience of the heritage-listed building.
