Jing An Shangri-La, West Shanghai appoints Alvaro Roa as the new Chef de Cuisine of Calypso Restaurant & Lounge.In his new role, Chef Alvaro will be tasked to lead the 22-strong international culinary team and refresh the culinary experience at the Mediterranean-themed restaurant.
Chef Alvaro comes from Spain, Madrid and started his professional culinary career in Spain before making his way to London, Ireland, Mexico, Chile, Dubai before landing in Shanghai, China to join Jing An Shangri-La, West Shanghai. Chef Alvaro has more than 13 years of experience in the culinary arts of European cuisine and has worked for internationally recognised hotels such as Park Hyatt Madrid, Mayfair London and the Grand Hyatt Santiago. His journey into the culinary arts is a unique story of an avid traveller, who picked up cooking as a means to travel and experience different cultures around the world, seeking adventure and to broaden his culinary horizons.
Diners will be able to experience a brand new a la carte lunch and dinner Mediterranean menu with focus on Spain, Italy and South of France. Chef Alvaro only uses the freshest ingredients, sourced ethically from the local and international markets, to retain the authenticity of the dishes. The new menu will be launched late September 2015.
Supplementary menus that reflect the seasons – Fall, Winter, Spring, Summer, will be launched every quarter to provide guests with variety and an opportunity for Chef Alvaro to further showcase his culinary innovations. His signature dishes include the Galician-style Atlantic Octopus (Pulpo Da Feria, originating from Spain, Galicia), Braised Ox Tail (Rabo De Toro, originating from Spain, Cordoba) and the Seafood Paella.

Chef Alvaro adds, “I am excited to be in China for the first time and for this opportunity to share the culture and flavours of the Mediterranean through my dishes. Recipes used are authentic to the country of origin but thoughtfully and subtly remodelled using the latest cooking techniques and freshest ingredients. It is important to retain the original flavours but I like to jazz it up with my own personal touch of creativity in the presentation of each dish.”
Calypso Restaurant & Lounge offers Mediterranean food with key influences from Spain, Italy and South of France. Authentic Napoli-style pizza and home-made gelato also ranks high in popularity. The restaurant only uses the best and freshest selection of meat, seafood, cheeses and pastas. The dining experience within is informal but engaging with its architecture, cuisine and service.
Designed by world-famous architect Shigeru Ban, Calypso Restaurant & Lounge is housed in an airy, two-storey glasshouse that is openly modern with detailed, traditional touches. Its tall glass panels retract in the warmer months for guests to enjoy alfresco dining in a place of manicured greenery, in the heart of the city. Alfresco wining and dining is also available on the second floor at the Terrace Lounge – perfect for High Tea in the afternoon and morphs into entertainment central in the evening with happy hour, chill acoustic tunes and faster beats as the night progresses with the in-house DJ spinning. The restaurant is also next to one of Shanghai’s most recognised historical attractions, the former residence of Chairman Mao Zhedong.
