JU-Ma-Na Presents Exclusive Culinary Journey with Michelin Star Chef

The award-winning Ju-Ma-Na Restaurant presents an exclusive Spanish culinary experience with Michelin Star Chef Diego Campos from 16 – 18 February 2016. This gastronomic dining experience features a five-course set menu dinner, a tapas menu and a private cooking class with Chef Diego.

Spanish-born Chef Diego Campos, who has gained culinary experiences from across the Europe, is the owner of Rincon de Diego restaurant in Cambrils, awarded a Michelin Star since 2005. Chef Diego Campos’s courses will showcase modern Spanish cuisine with traditional influences. The five-course dinner features an appetizer of pears in cava and red wine. The second course will highlight fresh local Bamboo lobster with Spanish cold tomato soup, followed by a third course of Seabass with plankton pil pil sauce and ocean air. The fourth course is slow cooked veal with pumpkin puree and vegetable tissues. And finishing off with a dessert mousse of Catalan cream with vanilla ice cream. Open to all, the set dinner from 18.30 – 22.30 is priced at USD 120++ per person, while tapas menu is priced at USD 55++ per person. Meanwhile private afternoon cooking classes is priced at USD 95++ per person.

We will feature a selection of new Spanish wines to Bali. Cava, the traditional Spanish sparkling wine from Barcelona, is made in the same way as Champagne. Segura Viudas Brut Reserva, Rosado and Semi Seco beautifully crafted from local indigenous grapes showing fresh lively fruit flavours, will be also available. Morlanda red wine is a blend of Garnacha and Carinena, aged for at least one year in oak barrels, only produced in good vintages from the oldest plots of our vineyard high in the hills of Priorat, possibly the trendiest Spanish wine growing area at the moment. Valdubon white wine is from Rueda where the local Verdejo grape is partly fermented and aged on lees in the barrel to create a deliciously complex wine that makes an excellent accompaniment to fish and seafood. Valdubon Honoris is our very best wine from Ribera del Duero where the Tempranillo grape produces Spain’s most highly regarded red wine. Honoris is a blend of Tempranillo with a small addition of Merlot and Cabernet Sauvignon aged for 2 years in barrels and several years in bottle before release. A truly exceptional wine.
