New Chefs Recommendations at Nadaman

From April onwards, Nadaman treats discerning diners to a new menu of contemporary, yet authentic signature dishes created by new Chief Chef Tsuji and his talented culinary team. The highlights of the menu include chef recommendations such as Chef Special Homemade Fresh Sea Urchin Pudding with Consommé Jelly, Chef Special Shrimp Bisque Custard with Black Truffle Sauce, Chef Special Zuwaigani Snow Crab and Tomato Cappellini Pasta, Simmered Japanese Wagyu Beef with Seasonal Vegetables in Yoshino Style, Seasonal Japanese Mebaru Rock Fish and many more.

When Matcha Meets Kaiseki at Nadaman

This April, guests are invited to savour the pinnacle of Japanese cuisine through an eight-course Matcha Green Tea-themed Kaiseki dinner menu featuring a handful of premium ingredients. Menu highlights include Homemade Matcha Tofu with Fresh Sea Urchin; Fresh Snow Crab and Soften Yuba Tofu with Matcha Powder; Seasonal Tempura Platter served with Matcha Salts, Kisu Smelt, Whitebaits and Spring Vegetables; Grilled Japanese Isaki Fish Fillet with Matcha Favour and Sweetened Matcha Kuzugiri Glass Noodles with Red Bean Paste. Priced at HK$1,130 per person only.

Matcha Mania at Café Kool

Talented chefs celebrate their passion for matcha with a myriad of tantalising creations and desserts this April.  The all-you-can-eat selection includes Matcha Marinated Salmon with

Matcha Mayo, Deep-Fried Snapper with Matcha Bread Crumb, Mussel with White Wine and Matcha Cream Sauce, Matcha Jelly with Shira Mata and Coconut Milk, and Matcha Roll with Red Beans.

The Matcha Feast is available at the following times and prices:

Monday to Thursday

6:30 to 9:30 p.m.

Friday to Sunday and public holidays

6:00 to 9:30 p.m.

All about Matcha at Lobby Lounge

This April, matcha lovers will be spoiled by this heavenly tea from Japan, reinterpreted in a set of eye-candy tidbits: from cold plates to hot selections, and sweet dishes at Lobby Lounge.  Menu highlights include Seared Beef with Green Tea Noodles and Miso Dressing, Baked Fish Fillet with Matcha and Nut Crust, Japanese Rice with Marinated Tuna and Green Tea, Black Augurs Beef Skewer with Jalapeno Matcha Lime Dips, Matcha Mille Feuille and many more. The buffet is priced at HK$338 per adult and HK$268 per child and available from 1:00 to 5:00 p.m. on Saturday, Sunday and public holidays only.

Hanwoo Beef at its Peak at Shang Palace

Throughout April, Chef Mok has brings the rarely exported hanwoo beef from Korea to the table. Guest can taste the quality meat, coveted for its high marbling and rich juiciness while relishing delicious renditions of dim sum and speciality dishes at Shang Palace.

Menu highlights include Pan-Fried Korean Beef with Natural Black Sea Salt, Wok-Fried Diced Korean Beef and Asparagus with Teriyaki Sauce, Poached Sliced Korean Beef with Supreme Broth, Pan-Fried Buns filled with Korean Beef and Chinese Cabbage, Deep-Fried Korean Beef Puff with Onion and more.

 

Cooking Class at Angelini

On 29 April, Angelini’s Chef Alessandro unveils his secret kitchen recipes and tips on making three of his Italian favourite pastas burst with colours and flavours.  The creations include Ravioli Pasta filled with Mascarpone Cheese, Spinach, Sage and Parmesan Cheese; Black Ink Cappelletti Pasta filled with Prawns, Sea Scallops, Clams and Asparagus Sauce; Chitarrine Pasta in Amatriciana Style. The cooking class includes an afternoon tea, recipes, a certificate and an exquisite dinner. All for only HK$1,080 per person.

White Chocolate Matcha Cake with Macaroon at Déli Kool

Déli Kool introduces a White Chocolate Matcha Cake with Macaroon this April to delight guests with a sweet tooth. The refreshing bitterness of matcha green tea complements the sweetness of white chocolate and red beans, creating the perfect cake, priced at HK$300 only.
